Gluten Free Mint Chocolate Chunk Cookies

My husband is a huge chocolate lover.  I am more a vanilla kind of girl, but he needs a little chocolate every day.  So I made these gluten free mint chocolate chunk cookies just for him.  He took them to his work and everyone liked them.  They had no idea these mint chocolate chunk cookies they were eating were a vegan and gluten free treat.

These little mint chocolate bites of heaven would be perfect for a Christmas party, cookie exchange, or just to nibble on.

 

Gluten Free Mint Chocolate Chunk Cookies

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Combine all the dry ingredients in one bowl.
  3. In a saucepan, melt the chocolate, coconut oil and milk on med-low heat.
  4. Once they are melted together, add them to a bowl with the dry ingredients and mix.
  5. Lastly, add the eggs and mix until combined.
  6. If you are adding chocolate chips, fold them in the batter at the end.
  7. Form cookies into balls, place them on a lined baking sheet and press them down with your palm.
  8. Bake in the oven for about 10-12 minutes.

  1. I must watch my fat intake....can equal amounts of applesause be substituted for the coconut oil.....I have done this cake receipes.....Do you think it would work in a cookie receipe????
      1. Did I not read that you should NOT watch your 'fat' intake if you are referring to coconut oil? and that it is a healthy fat and we need them for brain development? Is it really healthier to subst apple sauce for coconut oil? I too am trying to watch my weight, would apple sauce be a better option?
        1. There has been some new studies showing that not all fats are created equal. I think you should absolutely stay away from saturated fats in processed foods. However, coconut oil is not as bad as it has been made out to be. That said, if you are counting calories, you should probably sub with applesauce because applesauce will have less calories.
  2. You can't go wrong with mint AND chocolate! These look yummy!!! I am also excited to try your baked falafel!! But if you don't have time to bake, you can always do no-bake!   3. i just finish this receipe.... I don't know why, but the cookies hare REALLY DRY. I try to put more almond milk ( by " T" you mean Table spoon right?) and still have difficulty to make balls.. What can i do !!? ( i use gluten free general purpose flour Thank you
    1. Yes T = tablespoon. I'm sorry yours were dry. :( Mine were not, but maybe it has something to do with the GF all purpose? I really thought GF all purpose would work. :(
  4. I made these last night. I think I over packed the dry ingredients cause the dough mixture was very dry and the texture turned out odd. The flavor, however, is superb! I'll be making these again today [trying to fix the mistake I made with the oat flour and cocoa.] My husband has loved all your recipes I've tried. He said your recipes are the bomb!!! I agree. =) I used 1 T coconut oil & also substituted the rest of the oil with organic apple sauce. Thank you!! <3
  5. Beware of the labels without the information. Oats do contain a form of gluten, so they are not exactly gluten-free. (http://www.livestrong.com/article/522560-gluten-content-of-grains/). Anyway, you may want to explore combining arrow-root, manioc, potato and rice flour in different proportions to obtain the same type of results. Otherwise, the recipe looks yummy and wonderful. Will try it and revert with news on flours.
