Slow Cooker Breakfast Quinoa

  • 1 cup quinoa
  • 3 cups milk (I used almond milk )
  • 4 medjool dates chopped
  • 1/4 cup pepitas
  • 1 apple peeled and diced
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp salt


  1. Throw all the ingredients in a crock pot .
  2. Cook on high for 2 hours or until all the liquid is absorbed.
  3. If you want to cook it overnight, turn on the crock pot to low right before you go to bed. It should be ready by morning.


Recipe Notes

You can cook this one low for 8 hours if you want to cook it overnight. It should last a week in the fridge and can probably be frozen as well.
