Creamy Cauliflower Potato Soup (Vegan)

Creamy Cauliflower Potato Soup.  Cauliflower is just one of those things I don’t do enough with.  It is so healthy and I really want to try and incorporate more into my diet.

One of my favorite things to make with cauliflower is cauliflower popcorn.  Now was about time to make a cauliflower soup.  The cauliflower adds a nice creamy texture without adding a lot of calories.

This creamy cauliflower soup will warm you up on a cold day.  We have actually had quite a few of those lately here in Dallas.  This creamy cauliflower potato soup is very easy to make as well.

Creamy Cauliflower Potato Soup

Prep Time 20 min Serves 5 servings     adjust servings

A super easy soup recipe great for those cold, winter days!

Ingredients

  • 1 head cauliflower chopped, then steamed or boiled
  • 4 yukon gold potatoes peeled and boiled
  • 3 cups veggie broth
  • 1 white onion diced
  • 1/2 tsp mustard powder
  • 1 T lemon juice
  • Salt to taste

Instructions

  1. Boil the cauliflower for about 10 minutes or until soft.
  2. Drain water.
  3. Rough chop the potatoes and boil for about 10 minutes or until soft.
  4. Drain water.
  5. Sautee the onions in a pan in a small amount of oil until they are soft and translucent in appearance.
  6. Put all the ingredients in the blender and blend until smooth.

Recipe Notes

This recipe should keep in the fridge for a little over a week. You can also freeze it for longer storage.

  2. Yummy! Made this today, finally! I had been wanting to for a month before the occasion presented itself! I added a pinch of white pepper and left the skins on some of the potatoes and steamed an extra potato to cube and add to the creamed soup, Between the small pieces of skins and adding a shake of smoked paprika to the bowl when serving you may be able to fool those individuals that prefer to have a little bacon in their tater soup! :) Thanks for the recipe!
  3. Could you puree this with an immersion blender? I just got one and I'm not sure of its limitations. Is this too big a job? This soup looks delicious by the way.
