White Chocolate Banana Bread

I have made you some white chocolate banana bread!  After I became vegan, I thought anything white chocolate was out of my reach.  Sure there are a couple vegan white chocolate chip brands out there, but most of those contain unwanted ingredients. 🙁 So I had to create my own “white chocolate.”  As you probably already know, white chocolate goes so well with banana bread.  This white chocolate banana bread is super delicious.

This white chocolate banana bread is not only delicious.  It’s also gluten free.  By combining the cocoa butter and macadamia nuts, I created a similar taste to white chocolate.  If you are not vegan, feel free to use regular white chocolate chips.

Prep Time 15 min Cook Time 15 min Serves 8 mini loaves     adjust servings

Super moist banana bread made from whole grains!

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. In a blender or food processor , blend up the macadamia nuts into a butter. It should only take a couple minutes.
  4. Add the macadamia butter to a small saucepan with the cocoa butter, maple syrup, bananas and vanilla extract.
  5. Cook on medium heat until everything is melted and mixed well.
  6. Add to a bowl with the dry ingredients.
  7. Lastly, add in the eggs and mix until everything is well combined.
  8. Spoon batter into a greased mini loaf pan .
  9. Bake for 12-15 minutes or until a toothpick comes out clean.
  10. Wait until the loaves are completely cooled before removing from the pans.

Recipe Notes

If you don't have a mini loaf pan, you can make these into muffins as well. If you choose to make this recipe into 1 large loaf, you will need to up the cooking time a bit. I created a "white chocolate" taste by combining the macadamia nuts and cocoa butter. If you are not vegan, feel free to use white chocolate chips.

  2. I substituted chunky sunflower seed butter for the macadamia nuts, due to a nut allergy in our house. It was delicious! Who knew that vegan, nut free and gluten free could be so good?

  5. OMG! I have been on the hunt for a banana nut bread/muffin recipe for my husband and have tried a few recipes that just haven't turned out quite right. So today I finally tried this recipe with a couple of substitutions (leaving out the cocoa butter and macadamia nuts and adding olive oil and walnuts) and it turned out PERFECT! Don't know what I'd do without your blog! My family appreciates you! :)
