Crock Pot Spaghetti & Vegetables (vegan)

Crock Pot Spaghetti & Vegetables.  I have been trying to come up with more crock pot recipes lately.  This crock pot spaghetti recipe was actually my husband’s idea.

I love this crock pot recipe because it is a one pot meal making cleanup a snap.  Not to mention it’s super easy!  Slow cooking this allows for more of the flavors to develop as well.

This is an inexpensive meal that is very filling and makes a a lot.  I kept mine gluten free by using brown rice spaghetti, but you can use any pasta you like.

UPDATE: After some feedback, I have altered this recipe a bit.  It now calls to add the spaghetti when there is only 20 minutes left in the cooking process.

Crock Pot Spaghetti & Vegetables

Prep Time 10 min Cook Time PT1 H30M Serves 5 servings     adjust servings

A super easy one pot meal!

Ingredients

  • 1/2 package pasta (I used brown rice spaghetti)
  • 2 cups water
  • 1 green pepper chopped
  • 1/2 an onion diced
  • 2 cloves garlic minced
  • 1 red pepper chopped
  • 5-7 mushrooms sliced
  • 3 cups diced tomatoes or 1 28oz can diced tomatoes
  • 2 T fresh basil chopped
  • 2 T fresh parsley chopped
  • sea salt to taste

Instructions

  1. Put everything except the basil and parsley and pasta in the slow cooker and cook on low for about 1/2 an hour.
  2. Then turn to high for another 1 1/2 hours or until the onions start to soften.
  3. Add in the pasta when there is about 20 minutes of cooking time left.
  4. Add the basil and parsley about 5 minutes before the spaghetti is done.

Recipe Notes

If the sauce seems a little thin to you, you can add some arrowroot or non GMO cornstarch to thicken it up. This meal should keep in the fridge for a week.

    1. Confirming…. turn on high for another 30 minutes or another 90 minutes? Doing that would make the time of the meal over 1 hour and 40 minutes like stated up above?
        1. I'm still confused about how long to cook it total. There's the 30 minutes low, and then it says "1 1/2 hours" on high, putting pasta in for the last 20 minutes. So it's actually a total 2 hours of cooking, with 30 minutes low and 1.5 hour high?
          1. It's a total of 2 hours. 30 minutes on low and then 1 1/2 hours on high. The pasta goes in when there is about 20 minutes left.

  3. What kind of crock pot do you use? I've read that some of them leave traces of metals and other not so great toxins into the food. I know there is a brand that uses a clay pot that's supposed to be ok but I thought youight have some other ideas! Thanks for the fantastic recipes!

  5. I was excited to try this and did so this afternoon... how disappointing :( the spaghetti was MUSH - I used whole wheat spaghetti - and the peppers were HARD, not crunchy, hard. what a waste of ingredients as I had to throw out the whole thing :(
        1. I'm not sure. :( My husband made it twice without any issues. I am going to make it again this weekend and see if I can make it better. I just feel terrible that you had to throw it out.
          1. I used gluten free noodles and same here it isn't working out right for me either. I did the 20 min like it said and the noodles aren't done yet. hmmmmm where did I go wrong? It does smell good though!!
  6. Just a clarification. In the pictures it looks like you put the spagetti in the crockpot first. In the instructions, it says to put the spagetti in for the last 20 minutes. Which way is best?
    1. I originally put the spaghetti in first. It worked fine for me, but I got some negative feedback from some readers, so I updated the recipe to put the spaghetti in at the end.
  7. Gotta tell you, I love this! I only had white rice pasta and I added black olives, dried oregano, fennel seeds and roasted sliced Italian sausage. The pasta did came out mushy, but that's what I love about it! Kinda reminds me of that chef boy r dee spaghetti and meatballs I grew up eating but better! I'll definetly be making this more often. Thanks for the recipe.
  8. I made this on Sunday for dinner, the flavor is really good but my noodles are so soggy! This was my first time using the brown rice pasta so I don't know the normal texture for it but is it normal for it to be so mushy or did I possibly overcook?
  9. I must have done something wrong. it came out horrible. the pasta melted and it looked and tasted like something i regurgitated... so sad right now.
