Healthy Southwestern Salad
A healthy salad for those days it's too hot to cook.
- 1 head of romaine lettuce (rough chopped)
- 1 cup corn
- 1 cup cherry tomatoes (halved)
- 2 cup black beans
- 3 avocados (sliced)
- 3 green onions (chopped)
- 2 limes juiced
- 1/2 tsp chili powder
- 2 T chopped cilantro
- salt to taste
- Combine all ingredients in a bowl and mix well.
- If you can let it sit for 30 minutes in the fridge, the flavors will develop more.
This salad should last about 4 days in the fridge. Enjoy!
