Healthy Blueberry Pie (Vegan and Gluten Free)

Healthy Blueberry Pie.  Out of all the desserts out there, pie has always been my favorite.  In fact, my very first blog post was a pie recipe.

Please forgive the awful photos!  Since we are in the middle of berry season, I was thinking about blueberry pie.

Last weekend, we took the girls out to lunch at Spiral Diner.  My husband got the blueberry pie for dessert.  It was good!  I knew I could come home and make a healthier blueberry pie!  My homemade blueberry pie is not only delicious, it’s vegan, gluten free and grain free!

Healthy Blueberry Pie

Prep Time 15 min Cook Time 20 min Serves 12 thin slices     adjust servings

A healthier version of the classic pie!

Ingredients

    For the crust

    For the filling

    Instructions

    1. Preheat oven to 350.
    2. In a food processor , mix the flour and salt. Add in the coconut oil and flax egg and pulse until a dough starts to form.
    3. Press the dough into a glass pie dish and bake for about 9-10 minutes.
    4. In a medium saucepan, combine the blueberries, maple syrup, water, lemon juice, cinnamon, and salt. Bring to a boil and then turn down and simmer for about 3-5 minutes.
    5. Once the mixture is done simmering, add in the chia seeds and arrowroot and mix well. Let the mixture sit for about 5 minutes.
    6. Pour the blueberry mixture into the pie crust and bake for 15-20 minutes.

    Please keep the pie stored in the fridge. It should last at least a week. You may even be able to freeze it, but I haven't tried to say for sure. The crust recipe I used was from Elana's Pantry .

    3. This pie sounds very nice. A word to the wise: if you make this with oats, it will not be grain free. Oats, unless you buy gluten free ones, have gluten, by definition.

    7. This blueberry magic on top of luscious, full-fat (plain) Greek yogurt is ahhhhhmazing! I'm thinking overnight oats with some of it stirred in would be enough to make everyone jump out of bed tomorrow morning. If there is any left over I'm hiding it for spoon-to-mouth therapy sessions. (It really is that good!)
    8. Chia seeds just don't agree with me. I don't know if that is common or not. I've tried a couple times to be sure it was chia. Do you think this will work without them? or perhaps adding something else?
    9. I just went blueberry and blackberry picking this weekend, so I HAD to make a dessert! This came out amazing! I used a real egg instead of the flax egg and only 2T of honey instead of the maple syrup (my berries were super sweet). I also topped it with oats and cinnamon after it was done baking and broiled the pie for about 5 minutes to make a crumble-like topping. Thanks for the awesome recipe!
    10. This is the best blueberry pie ever! Have already made it twice! I love the flavor that the maple syrup and cinnamon give to the filling. I buy frozen vegan whole grain spelt pie crusts, so this takes only a few minutes to make. We also put the warm filling on pancakes or ice cream.
    11. I was so excited when I found this recipe, dejected when I saw coconut but elated when you said another oil could be used ...... Now I only have one problem. Will rice flour work? My five year old grandson has such a limited diet and I try to find as many good substitutes for him as possible. He was begging me to make him a pie but so far no luck ...unless I can use rice flour.
