Chocolate Zucchini Muffins

Prep Time 10 min Cook Time 10 min Serves 12 stanard sized muffins     adjust servings

A healthier muffin with a hidden serving of veggies!

Ingredients

  • 2 cups shredded zucchini
  • 2 flax eggs
  • 1 1/4 cup gluten free oat flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet in another bowl.
  4. Add wet to dry and mix until combined.
  5. Fold in the chocolate chips.
  6. Spoon batter into lined or greased muffin pans . I use silicone liners that work awesome.
  7. Bake for 15-17 minutes, or until a toothpick comes out clean.
