Homemade Granola Bars

Homemade granola bars was one of the first recipes I tried to make from scratch.  I started with my peanut butter granola bars.  Once I realized how easy homemade granola bars were to make, I felt silly buying them pre-made bars.  This new granola bar recipe is just as easy!

My granola bars are chewy.  I bet if you liked them a little crispier, you can turn down the oven temp and cook them a little longer.  I thought they were great just the way they were.  These granola bars are also vegan and gluten free.  Perfect to take to work or on the go.

Prep Time 5 min Cook Time 20 min Serves 8 bars     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another bowl .
  4. Add wet to dry and mix until combined.
  5. Line an 8x8 glass baking dish with parchment paper, leaving a bit of paper sticking out the sides.
  6. Press the mixture into the baking dish.
  7. Use the extra sides of parchment paper to press the mixture down firmly to ensure the bars hold together.
  8. Bake in the oven for 20 minutes.
  9. Let the pan completely cool before cutting and removing from the baking dish.
  10. Store in an airtight container in the fridge for up to 2 weeks.
  11. You can also freeze them for longer storage.
  12. Enjoy!

  1. Has anyone found cacao nibs that don't have any kind of nut allergy warning on them? I'm having no luck and really want to give them a try! Thank you!
      1. I tried with flax seeds - taste wise they were great! But they were super crumbly and ended up more like granola. I would have thought the flax would have helped hold it together. Not sure what happened - I pressed down really hard in the pan and let it cool completely before cutting :-(
  2. Okay I have a question for you. You're the perfect person to ask because I see you using flax eggs all the time. I know that flax eggs are often successful in recipes that call for real eggs, but can real eggs be used as a substitute in a recipe that was specifically created using flax eggs? Do you think I could use real eggs in all your recipes that call for flax eggs, and the results would still be fine?
  3. Sounds yummy and easy. So much better those those additive ridden commercial ones. One question, as I am from NZ I haven't seen hemp seeds around. I guess I can swap them for sunflower or sesame seeds? Oh I see my question may have been answered above. Could try chia or flaxseeds.
  4. Sadly these didn't turn out for me! I think there was not enough liquid to hold them together for me maybe? They were very crumbly and fall apart even just cutting them. It's almost like soft granola? I'll probably try them again and maybe add some almond butter or honey to hold them together better. I'm sure it was something on my end as everything else of yours I make turns out great! Any ideas on what I can do with it to salvage it or use it in some way? Thanks! :)
    1. I am sorry they didn't work for you. :( Did you let them cool completely before cutting? Also I packed the mixture down hard into the baking dish. You can probably eat it over some yogurt?
  5. hi, i subbed the maply syrup with honey (struggle to find maple syrup in south africa), and it didn't work. very soft, falling apart (i let it cool completely overnight). do you think it could be that? can i sub with a healthy sugar like rapadura or do i need something liquid? also, i mixed wet and dry, then suddenly dinner was ready, so the mixture was standing around probably for an hour. could that also impact the end result, perhaps the dry ingredients got a bit too humid before baking? thanks for your thoughts!
    1. Maybe? I am so sorry they didn't work out. :( I don't think swapping honey would have made the difference, but maybe leaving the ingredients out did?
  6. Delicious! Made this morning. May add more honey next time or some peanut butter. They were still falling a bit apart but not too bad. The ones at the store do that too sometimes.
