Texas Caviar

Prep Time 10 min Serves 5-6 cups     adjust servings

A super healthy recipe that you will love!


  • 2 cups black beans
  • 2 cups black eyed peas
  • 1 cup diced red pepper
  • 1 cup diced green pepper
  • 1/2 cup diced red onion
  • 2 green onions chopped
  • 1 cup corn
  • 1 1/4 cup cherry tomatoes (cut in quarters)
  • 1 1/2 T lime juice
  • 1 T olive oil
  • 1 T apple cider vinegar
  • sea salt to taste


  1. Put all the ingredients in a bowl and mix well.
  2. I think the flavors get better as the salad sits in the fridge overnight.
  3. This should last about a week in the fridge. Enjoy!


Recipe Notes

Normally, jalapeno is added to Texas caviar. I didn't add it because I am a huge wimp when it comes to spicy food. Feel free to add some in if you like!
