Blueberry Bliss Bars (Vegan, Gluten Free, Paleo)

I don’t know if you noticed, but I love recipes that use only a few ingredients.  These Blueberry Bliss Bars are just that.  All you need is 4 simple ingredients to make these blueberry bliss bars!

This no bake recipe is perfect for summer.  I know I don’t want to spend time in my kitchen with the oven on.  It’s hot down here in Dallas!

These yummy bliss bars are vegan, gluten free and paleo.  This was my first time using creamed coconut and I have to say that it was pretty much exactly like coconut butter.  The only difference I noticed, was that creamed coconut seemed to soften faster out of the fridge.

Another great thing you could do with these no bake bars is drizzle a little of my 3 ingredient chocolate over the top.  Yum!  If you do that, then you will need to keep the bars in the freezer.

Prep Time 5 min Serves 18 small squares     adjust servings

A no bake treat perfect for summer!

Instructions

  1. Combine all ingredients in a food processor until the mixture is smooth.
  2. Line an 8x8 pan with parchment paper, leaving enough room for some paper to stick out the sides.
  3. Dump the mixture into the pan and spread it out evenly. The mixture is very thick and you may need to wet a spatula to help spread it evenly.
  4. Once the mixture is in the pan. Gently press down using the extra sides of parchment paper.
  5. Stick the pan in the fridge to firm up. This should only take about 15-20 minutes.
  6. Once the mixture is firm, lift the whole thing out by the edges of parchment paper.
  7. I used a pizza cutter to cut mine into squares.

UPDATE: Some brands of creamed coconut will cause these to stay soft in the fridge. If you find that happens to you, just pop the bars in the freezer instead. You can also use coconut butter in place of creamed coconut

Please store these bars in the fridge. I keep mine in an airtight container with a piece of parchment between each bar. They should last at least a week in the fridge and you can also freeze them for longer storage. Enjoy!

  1. Hello! These absolutely sound delicious, but I don't really like the taste of coconut, but I love blueberries. Is there anything else I could substitute in for it? Greek yogurt or something like that?
    1. I was thinking I would try and substitute the cream coconut with low-fat whip cream, and use stevia to sweeten it to cut down on the calories.
  2. Your link goes to a Let's Do Organic creamed coconut (which I bought) but you state you used Artisan coconut cream. Your brand seems like "butter" consistency but the Let's Do Organic brand is hard blocks. Even after reading all the comments I am confused on which one to use. I don't know why your link goes to a brand you didn't use? Help! I have been waiting to make these for a month and I thought I finally got everything. Now I am not sure.
    1. Thank you! I don't know the nutritional facts, but you can probably plug the recipe into My Fitness Pal for a rough estimate.
  3. Can you please tell me if its the Let's go Organic that you liked or the Artisan brand that we should use? Have you used the brand you linked? If so what was the outcome?
      1. I found all the stuff to make these. I used half Go Organic because softened it looked more like your photos. I used Artisana as well after I scrapped of the top layer of coconut oil looking stuff and using a spoon to get out the hard center. They looked nothing like yours. I don't know what I did wrong because they are a grey color due t to the blueberries being pulverized. Any tips? or perhaps a video?
        1. My picture may look a little different due to the lighting at the time the photo was taken. To use coconut butter, just stick the jar in a bowl of hot water and it will soften right up. I hope you could still eat them. Sorry they were not what you expected. :(
          1. I just made these for the first time. I couldnt find ground vanilla but I used vanilla extract instead. I bought thr maranatha brand all natural coconut butter and stuck it in microwave for a few seconds. it poured right out. Ending Results turned out great. Thanks So much for sharing this recipe!
  4. I had the organic creamed coconut as well which is indeed hard as a rock. I gently softened it in the oven but the minute I added the frozen berries, it hardened again and it was inhandlabe. All frustrated I threw the whole batch in the microwave for a minute and a half, stirred it all together by hand and tipped it in the dish! Perfect! Not as pretty as the one in the picture (no flecks of blueberry and ground vanilla) but a purple mush with mostly whole berries in it. No matter - it tastes delish just the same!
  5. As someone else mentioned above, I am curious how your creamed coconut looks so creamy? All kinds I have found d are hard blocks. Do you just leave the block out to soften up before using? Thanks!
    1. I stuck mine in a bowl of hot water to melt it a little before using it in this recipe. Also, when you blast it through the food processor, it makes it soft.
        1. I used the jar of Artisana coconut cream and stuck the whole jar in the water to soften it. The you can easily scoop it out.
          1. Your link to Artisana says coconut butter not cream. Does Artisana have coconut cream? Or did your jar say coconut butter?
          2. The stuff I used is Artisana coconut butter. It used to say creamed coconut on the jar, but now it goes by coconut butter. Maybe because it was confusing to people to call is creamed coconut? That is my guess.
  6. I have had my eye on these for while and today is finally the day that I make them! The only problem is I thought "creamed coconut" and "coconut cream" were the same thing! Eeep! I have left my tins of coconut milk in the fridge over night so the cream at the top is a good thick consistency, will it work the same? Thank you x
  7. i finally gathered all the stuff needed to make this. I used the Go Organic and the Artisana brand. I had to use extra maple syrup and added more vanilla as the recipe as it stands wasn't very sweet. However, they look nothing like your picture. Mine are a purple grey color. They taste good but might be a little to rich for my taste. I can't wait to try them after they set. Maybe you could post a youtube video of you making them so we can really get an idea of exactly what you used, how you used it, and how you got them to look like your photo.
  8. I have a question about the ground vanilla, is it possible to use vanilla extract or paste? if not where did you get your vanilla, and was it already ground or did you grind it yourself? Thats actually a lot of questions... i have all of the ingredients but the vanilla, I'm not much of a baker so.....Thanks!
    1. I get the beans ground on Amazon. Here is the link. http://tinyurl.com/ouk5kob You can also buy a vanilla bean, cut it open and scrape out the seeds. You can use extract, but keep in mind that you will taste the alcohol since this is not baked.

  9. I made these tonight and subbed vanilla extract for the ground vanilla because I don't have any yet (I'm brand new to the Paleo lifestyle). I also used strawberries instead of blueberries and it was delicious! My super picky kids loved them :-) Thanks for the fabulous recipe that has helped make them believe natural can be good after all! Lol
