Chocolate Coconut Banana Bread

Chocolate, coconut and banana go so well together in this easy banana bread recipe!

Ingredients

  • 2 cups gluten free oat flour
  • 1 1/2 cups unsweetened shredded coconut
  • 1/4 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 2 flax eggs (real eggs work too)
  • 3 very ripe bananas smashed
  • 1/4 cup coconut milk
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1/4 cup dark chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another bowl .
  4. Add wet to dry and mix until combined.
  5. Fold in the chocolate chips.
  6. Pour batter into a parchment lined loaf pan. I used a 9 inch loaf pan .
  7. Bake for 30-40 minutes or until a toothpick comes out clean.
  8. Wait until the bread has completely cooled before removing from the pan.

Recipe Notes

Store this bread in the fridge. It should last a week or two. You can also freeze it for longer storage. Enjoy!
