Easy Cabbage Salad
Ingredients
For the salad
- 2 cups red cabbage
- 1 cup shredded carrots
- 1 cup edamame
- 1/2 cup slivered almonds
- 1/2 cup chopped green onions
- 3/4 cup chopped apples
- sea salt to taste
For the dressing
- 1/2 cup tahini
- 1/2 cup water
- Juice of 1 lemon
- 1 T mirin
- sea salt to taste
Instructions
- Mix all salad ingredients in one bowl .
- Whisk together dressing in another bowl .
- Pour dressing onto the salad and toss well.
- Store in the fridge.
- Should last at least 4 days.
- Enjoy!
