Gluten Free Gingerbread Pancakes

I have the perfect holiday breakfast for you.  Gluten Free Gingerbread Pancakes.  I already have a recipe for gingerbread pancakes on the blog, but it’s not gluten free.  So I slightly tweaked that recipe to come up with these gluten free gingerbread pancakes.  This would be the perfect breakfast for Christmas morning.  To make things easier, you could mix the dry ingredients the night before.  Then it’s super quick to pull these together.  Imagine how great your house will smell too!  I added chocolate chips to mine for an extra special treat.

Not only are these healthy gingerbread pancakes gluten free, they are also vegan and contain no oil.  Other than the small amount I added to the pan for cooking.  This is a recipe you could make a big batch of and freeze some.  This is great for those busy mornings!

Prep Time 5 min Cook Time 10 min Serves 8 pancakes     adjust servings

Ingredients

Instructions

  1. In one bowl , mix the dry ingredients.
  2. Mix wet in another bowl .
  3. Add dry to wet and mix until combined.
  4. Fold in the chocolate chips
  5. Add a little oil to a saute pan and turn the heat to medium.
  6. Using a 1/4 cup scoop, drop the batter into a saute pan .
  7. Once the edges turn brown on the sides, it will be time to flip the pancakes.
  8. I was able to make 4 pancakes at a time in my pan.
  9. Repeat these steps until all the pancakes are done. You may need to add a little extra oil to the pan.
  10. Serve immediately or refrigerate/freeze for later.

  1. I LOVE your recipes and have made a ton from your website! I wanted to let everyone know though that I tried this one today using a gluten free flour mix (that I had purchased pre-blended) and it didn't really turn out well. The pancakes had a beautiful golden outside but didn't seem to cook inside (even though they were fairly thin). I will try next time with sorghum flour, once I can find some in my area :)
  2. My three year old son helped me make these for dinner last night and they were delicious! We don't need to be GF so I used 1 c whole wheat and 1 c AP flour. I think I could have added more milk to thin them out a little, but I didn't matter because they were delicious and didn't last! Another great recipe! Thank you!
