Sweet and Sour Cauliflower Stir Fry

Prep Time 5 min Cook Time 25 min Serves 4 servings     adjust servings


    For the stir fry

    • 2 cups cooked brown rice or quinoa
    • 1 head of cauliflower chopped into florets
    • 2 cups peas
    • 1/2 yellow onion chopped
    • 1 garlic clove minced
    • sea salt to taste

    For the sauce

    • 1 cup pineapple juice (I juiced my own)
    • 1/4 cup water
    • 2 T white vinegar
    • 1/4 cup ketchup (I used homemade )
    • 2 T coconut aminos or soy sauce


    1. In a bowl , mix all the sauce ingredients together.
    2. In a large saute pan , with a little oil, add the cauliflower florets, onion, peas and sweet and sour sauce. Cook half covered on medium heat for about 15-20 minutes.
    3. Add the garlic and salt and cook uncovered a couple more minutes.
    4. Serve over the rice or quinoa.
    5. I also added some raw bell peppers to mine right before I ate it.
    6. This should last a week in the fridge. Enjoy!!
