Banana Chocolate Chip Muffins

You have got to try these Banana Chocolate Chip Muffins!  My 5 year old asked for a cupcake maker for Christmas.

It was the one thing she begged for.  I got it for her.   I was thrilled she was taking an interest in baking!  The cupcake maker came with a book full of recipes, but none of them were whole foods based.  I had 3 ripe bananas I needed to use, so I created this recipe for banana chocolate chip muffins.

These healthy muffins are gluten free and vegan, with very little added sugars!  The super ripe bananas were very sweet on their own.  I made some of the muffins in the cupcake maker, and the rest in a jumbo muffin pan for my husband.  I will write the recipe for an oven though.

These must have been good because the girls ate every single mini muffin from the cupcake maker!  There were seriously none left!  I am glad I taste tested one right out of the oven!

This recipe is super easy with only 8 ingredients!  They are seriously good.  Light and fluffy!  If you like this recipe, you may also like my banana blueberry muffins or my chocolate zucchini muffins.

Banana Chocolate Chip Muffins

Prep Time 5 min Cook Time 12 min Serves 12 stanard sized muffins     adjust servings

Only 8 simple ingredients and less than 20 minutes to make this easy muffin recipe!

Instructions

  1. Preheat oven to 350.
  2. Mix dry ingredients on one bowl .
  3. Mix wet in another bowl .
  4. Add dry to wet and mix until combined.
  5. Fold in the chocolate chips.
  6. Spoon mixture into lined muffin pans .
  7. Bake for 10-12 minutes.
  8. Let the muffins cool completely before removing them from the pans.
  9. Store in the fridge. You can also freeze them for longer storage! Enjoy!

          1. Yes, I followed the recipe exactly. I noticed there were only seven ingredients under the recipe where the header said eight ingredients. Would something like baking powder help? Thanks!!
  2. Hi Melissa, Can you make this with normal flour? If so here in the UK we have plain flour and self raising which has added raising agents. Which flour would you suggest? Many Thanks Nina ps Happy New Year + I love your site.
          1. I use rolled oats and I grind them in the blender. Just blend until they turn to powder. It will be slightly more coarse than store bought oat flour, but it still works great.

  4. I printed and followed the recipe before it was edited to include baking powder (so I didn't add it). Half of the recipe has already been baked before I looked here and saw the change. Is there anything I can do to save it? Thanks!
  5. I made these last night. I used whole wheat flour. I had to cook them an extra 10 mins. but they are great! (my over cooks slow, but I was really surprised how much longer I had to cook them.
