3 Ingredient Peanut Butter Cookies

You guys!  I don’t get this excited over cookies that often, but I am so excited about this recipe for 3 Ingredient Peanut Butter Cookies!  Seriously.  Best. Cookies. Ever. These 3 Ingredient Peanut Butter Cookies taste just like the classic peanut butter cookies, but without the flour or refined sugar!  Super easy too.

These healthy cookies are so good and very easy.  From start to finish it’s less than 20 minutes.  No mixer needed!  I think the sweet and salty combo is what make these out of this world delicious.

These peanut butter cookies are vegan, gluten free and grain free.  If you wanted a paleo version, you can use almond butter.  If you needed a nut free version, try using sunflower butter.  I think either will work out.

Some great add ins for this recipe would be:

  • chocolate chips
  • dried fruit
  • coconut
  • cacao powder

3 Ingredient Peanut Butter Cookies

Prep Time 5 min Serves 10 cookies     adjust servings

All you need is 3 simple ingredients to make this healthy cookie!

Ingredients

  • 1 cup unsalted natural peanut butter
  • 1/4 cup + 1 T maple syrup
  • 1 tsp sea salt (I was going for a sweet/salty flavor. If you just want sweet, use 1/2 the amount of salt.)

Instructions

  1. Preheat oven to 350.
  2. In a food processor , combine all three ingredients.
  3. Using a cookie scoop , drop cookies onto a lined baking sheet .
  4. Use a fork to flatten then and make the cross pattern.
  5. Bake for 10 minutes.
  6. Let cookies cool completely before removing from the baking sheet.

These cookies should keep for at least a week outside the fridge and longer in the fridge or freezer. Enjoy!!

  1. If I added chocolate syrup do you think it would turn out the same? Other then that they seem to be ok but not my favorite.
  2. I just made these and they *are* good :) However, they are super easy to fall apart. I didn't use just ground nut butter, it was the kind that *says* natural but has palm oil, salt and sugar added cause I can't get my kids to eat truly natural peanut butter. Not sure if that was the reason they were super soft. However, I was wondering, what do you think would happen if I added an egg?
    1. That could have been the reason. I am sure if you add an egg next time that should help. Sorry they fell apart for you. :(

  4. I just tried these cookies today and honestly I'm disappointed. I am a huge fan of peanut butter cookies but these tasted healthy--did not taste like a normal cookie. I threw them out.
    1. Sorry you didn't care for them. Since I cook healthy recipes, they were sweet enough for me. I understand not every recipe will be a hit with everyone.
      1. When you do this, it says 1 serving is 180 calories - but I believe that's for 10 cookies - am I correct or is that really for 1 cookie? Thanks - these were great!!
  5. Okay, I'm not expecting my mother-in-law's sandy, crunchy peanut butter cookies, which I adored, and the recipe for which I hunt to this day. Knowing they're not *those* peanut butter cookies, so my taste buds are prepared, and looking at this recipe, I'm pretty sure I'm going to love every morsel, even if they do crumble. What's not to gobble when it's peanut butter, maple syrup and salt? We use fresh-ground peanut butter, so I'm pretty sure they'll hold together fine. Curious to see if the peanut butter melts in the oven, though, and trying to figure out what makes them come out looking like cookies. Perhaps the salt, fiber and syrup combine molecularly?
