Lentil Burrito Bowls
All you need to do is add your favorite toppings to these lentil burrito bowls.
- 2 cups green lentils or brown lentils
- 2 cups water
- 2 tomatoes chopped
- 2 small garlic cloves minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- Optional toppings: roasted peppers, tomatoes, lettuce, avocado, salsa and corn.
- In a large saute pan, cook all the ingredients on low until all the liquid is absorbed and the lentils are softened. About 35 minutes. Finish with your favorite toppings. Enjoy!
