Lentil Burrito Bowls

Prep Time 10 min Cook Time 35 min Serves 3-4 servings     adjust servings

All you need to do is add your favorite toppings to these lentil burrito bowls.


  • 2 cups green lentils or brown lentils
  • 2 cups water
  • 2 tomatoes chopped
  • 2 small garlic cloves minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • Optional toppings: roasted peppers, tomatoes, lettuce, avocado, salsa and corn.


  1. In a large saute pan, cook all the ingredients on low until all the liquid is absorbed and the lentils are softened. About 35 minutes. Finish with your favorite toppings. Enjoy!
