Red Lentil Hummus

Prep Time 5 min Cook Time 15 min Serves 3 cups     adjust servings

Super easy hummus made with red lentils!

Ingredients

  • 1 cup dried red lentils
  • 2 cups water
  • 1-2 garlic cloves
  • 3 1/2 - 4 T tahini
  • 1 tsp sea salt
  • 1 tsp ground coriander
  • 1/2 - 1 tsp lemon zest
  • 1/4 tsp paprika
  • 2 T red wine vinegar
  • 1 T lemon juice

Instructions

  1. In a saucepan , add the lentils and water. Bring to a boil, then turn down and simmer until all the liquid is absorbed.
  2. Remove from heat and let cool.
  3. In a food processor , add the lentils and the remaining ingredients and blend until smooth.
  4. This mixture is thinner than traditional hummus, but it does firm up nicely once placed in the fridge.
