Chocolate Pecan Pie

Chocolate Pecan Pie made healthier!

Ingredients

    For the crust

    • 2 cups blanched almond flour
    • 2 T coconut oil
    • 1 flax egg (real eggs work too)
    • 1/4 tsp sea salt

    For the filling

    • 12 Medjool dates (soaked for at least 1 hour)
    • 1 1/2 cups pecans + more for garnish
    • 1 1/2 cups chocolate chips
    • 1/4 cup almond milk
    • 1 1/2 tsp cinnamon
    • 2 tsp ground vanilla beans
    • 2 T coconut oil
    • 2 T maple syrup
    • 1/4 tsp sea salt

    Instructions

    1. Preheat oven to 350.
    2. In a food processor , combine the crust ingredients.
    3. Press mixture into a glass pie dish .
    4. Bake for 10 minutes and set aside.
    5. In a food processor , add the pecans and chocolate chips. Mix for 1 minute. Then add the dates and mix for another minute.
    6. Lastly, add in the remaining ingredients and mix until smooth.
    7. Spoon mixture into the crust in the pie dish.
    8. Garnish the top with extra pecans and chocolate chips.
    9. Bake for 10-15 minutes.
    10. Serve warm.
