Mango and Black Bean Quinoa Salad

Prep Time 15 min Serves 3-4     adjust servings

The perfect summer salad! Vegan and gluten free.

Ingredients

  • 1 1/2 cups cooked quinoa
  • 2 cups cooked black beans OR 1 can black beans, drained and rinsed
  • 1 cup corn (I used frozen and thawed)
  • 1/2 cup green onion, diced
  • 3/4 cup diced mango
  • 1/4 tsp garlic powder
  • 1 T fresh cilantro, minced
  • Juice of 1 lime
  • 1-2 T orange juice
  • Sea salt to taste
  • Optional: 1/2 an avocado, sliced

Instructions

  1. Mix all the ingredients in a large bowl and place in the fridge for 30 minutes so the flavors can marinate. This should keep for at least 3-4 days in the fridge. Enjoy!
