Roasted Vegetable Hummus Pizza

Serves 2     adjust servings

A simple and healthy meal that is full of flavor!


  • 1 small eggplant, cubed
  • 1 1/2 cups baby tomatoes, halved
  • 1 small yellow onion, chopped
  • 1/4 cup balsamic vinegar
  • 1 tsp garlic powder (or 2 cloves garlic, minced)
  • Sea salt to taste
  • 1 cup Lilly's Smoked Tomato Basil Hummus
  • 2 pieces flat bread, naan, or pita bread


  1. Preheat oven to 400.
  2. Cube eggplant, salt and place in a colander for 20 minutes to draw out some moisture.
  3. After 20 minutes, add all the ingredients, except the hummus and flat bread, to a large bowl and mix until everything is well coated.
  4. Spread the veggies onto a lined baking sheet. Bake for about 35-40 minutes, stopping halfway to flip everything.
  5. Once the veggies are roasted, assemble the pizzas.
  6. Spread the hummus on top of each pita/flatbread.
  7. Top with roasted veggies.
  8. Serve immediately.
