No Bake Gingerbread Cookies

No Bake Gingerbread Cookies drizzled in creamy chocolate. ZERO refined sugar, vegan, gluten free and paleo. Make them in a few minutes time!

Ingredients

    For the cookies

    • 1 cup cashew butter
    • 1/2 cup almond flour
    • 3 T maple syrup
    • 1 tsp cinnamon
    • 1/2 tsp ginger
    • 1 tsp black strap molasses
    • Pinch nutmeg

    For the chocolate coating

    • 1/4 cup cacao powder
    • 2 T coconut oil
    • 2 T maple syrup

    Instructions

      To make the cookies:

      1. In a food processor , combine the cookie ingredients. Blend into a dough.
      2. Using a cookie scoop , form cookies and drop them onto a lined baking sheet . Place in the freezer while you make the chocolate coating.

      To make the chocolate:

      1. Combine all 3 ingredients for the chocolate in a mixing bowl . Whisk together. Once mixed well, drizzles over the cookies with a spoon. Place back in the freezer to set. Enjoy!
