Edamame Black Eyed Pea Citrus Salad

This healthy Edamame Black Eyed Pea Citrus Salad is sure to be a hit at parties. The citrus dressing makes this a winning dish. Vegan and gluten-free.


  • 2 cups thawed edamame
  • 2 cups cooked black eyed peas
  • 1/2 cup red onion, diced
  • 1/4 cup fresh flat leaf parsley, chopped
  • Juice from 1/2 an orange
  • Juice from 1 lime
  • 2 T apple cider vinegar
  • 2 T olive oil
  • sea salt to taste


  1. In a large mixing bowl , add all the ingredients. Mix well.
  2. Place in the fridge for 30 minutes so the flavors can marinate.


Recipe Notes

This should be stored in the fridge and should last at least 5 days. Enjoy!
