Edamame Black Eyed Pea Citrus Salad
This healthy Edamame Black Eyed Pea Citrus Salad is sure to be a hit at parties. The citrus dressing makes this a winning dish. Vegan and gluten-free.
- 2 cups thawed edamame
- 2 cups cooked black eyed peas
- 1/2 cup red onion, diced
- 1/4 cup fresh flat leaf parsley, chopped
- Juice from 1/2 an orange
- Juice from 1 lime
- 2 T apple cider vinegar
- 2 T olive oil
- sea salt to taste
- In a large mixing bowl , add all the ingredients. Mix well.
- Place in the fridge for 30 minutes so the flavors can marinate.
