Pineapple Cauliflower Fried Rice

Ingredients

  • 1 head cauliflower (cut into florets)
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup diced pineapple
  • 2 T coconut aminos or soy sauce
  • 1 T toasted sesame oil
  • 1 cup cashews (garnish)
  • 1/4 cup green onions (garnish)

Instructions

  1. In a food processor , pulse the cauliflower florets into a rice-like consistency. Transfer to a large saute pan on medium heat. Stir often and cook until the cauliflower rice looks a little toasty. About 5 minutes.
  2. Then add in the remaining ingredients, cover and cook about 5 minutes.
  3. Remove from heat and serve.
