Roasted Mushrooms with Thyme

This simple and quick side dish is full of flavor. Vegan, gluten free and paleo!


  • 2lbs mushrooms, cleaned
  • 3 T balsamic vinegar
  • 1 T avocado oil
  • 1 tsp garlic powder
  • 3/4 tsp dried thyme
  • Himalayan sea salt to taste


  1. Preheat oven to 350.
  2. Mix all ingredients in a mixing bowl and stir well.
  3. Transfer to a lined baking sheet and bake for 25-30 minutes.

These should keep in the fridge for about 4 days. Enjoy!
