Slow Cooker Smoky Sweet Potato Soup
This should last at least a week in the fridge. You can also freeze it for longer. Enjoy!
Ingredients
- 3 sweet potatoes, peeled cubed
- 1 onion, diced
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 tsp chili powder
- 1 tsp smoked paprika
- Sea salt to taste
- 2 cups almond milk or milk of choice
Instructions
- Put all ingredients (except the almond milk) in a slow cooker and cook on high for 3-4 hours. Once cooked, add the almond milk and use an immersion blender to blend smooth.
