No Bake Pecan Pie Cookies

Prep Time 5 min Serves 12-15 cookies     adjust servings



  • 6 Medjool dates (soaked for 20 minutes)
  • 1 1/2 cups pecans + more for garnish
  • 1/2 cup coconut butter
  • 1 tsp cinnamon



In a food processor add the pecans and blend up into a fine consistency.
Then add the remaining ingredients and blend until a dough forms.
Using a cookie scoop, drop cookies onto a lined baking sheet.
Press a pecan into the tops of each cookie.
Place in the fridge to chill for a few minutes.
