Flourless Vanilla Bean Cookies

Prep Time 5 minutes Cook Time 15 minutes Yields 12-15 cookies     adjust servings



  • 1 1/2 cups cooked chickpeas OR 1 can chickpeas, drained and rinsed
  • 1/2 cup cashew butter, or nut butter of choice
  • 1 1/2 tsp ground vanilla beans
  • 1/2 tsp vanilla extract
  • 1/2 cup coconut sugar
  • 2 T unsweetened vanilla almond milk


Preheat oven to 350.

In a food processor, add the beans and blend.

Then add the remaining ingredients and mix until smooth.

Using a cookie scoop, drop cookies onto a lined baking sheet.

Bake for about 15 minutes.

Let the cookies cool before removing and storing in an airtight container.


Recipe Notes

Keep these cookies stored in the fridge.  They should last about 1 1/2 weeks.  Enjoy!
