Flourless Vanilla Bean Cookies
Ingredients
- 1 1/2 cups cooked chickpeas OR 1 can chickpeas, drained and rinsed
- 1/2 cup cashew butter, or nut butter of choice
- 1 1/2 tsp ground vanilla beans
- 1/2 tsp vanilla extract
- 1/2 cup coconut sugar
- 2 T unsweetened vanilla almond milk
Instructions
Preheat oven to 350.
In a food processor, add the beans and blend.
Then add the remaining ingredients and mix until smooth.
Using a cookie scoop, drop cookies onto a lined baking sheet.
Bake for about 15 minutes.
Let the cookies cool before removing and storing in an airtight container.
