Healthy Pinto Bean Salad

Prep Time 5 minutes Serves 6     adjust servings

This healthy pinto bean salad can be made in minutes.  It's vegan, gluten free and oil free!


  • 3 cups cooked pinto beans OR 2 cans pinto beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (I used frozen, thawed corn)
  • 3 green onions, chopped
  • 1 jalapeno, diced and deseeded
  • 1-2 T cilantro, chopped
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Sea salt to taste
  • Juice of 1 lime
  • 1 avocado, diced


Mix all ingredients in a bowl

This can be served immediately, but for best results, let it marinate in the fridge for 30 minutes.  Enjoy!

This should keep in the fridge for at least 4 days.
