Slow Cooker Pumpkin Caramel Oatmeal

Prep Time 5 minutes Cook Time 2 hours Serves 10     adjust servings


  • 2 cups gluten free rolled oats
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 5-7 cups water or almond milk
  • 1/2 cup date paste
  • 1/2 cup cooked pumpkin puree or 1/2 cup canned pumpkin


Add all the ingredients to a slow cooker and cook on high for about 2 hours. Serve immediately or refrigerate for later.  Enjoy!


Recipe Notes

This should last a couple weeks in the fridge and up to 6 months in the freezer!
