Strawberry Banana Muffins

Muffins are a great way to use up ripe bananas. I made these Strawberry Banana Muffins the other day because we not only had bananas to use up, we also had strawberries that needed to be used.  These Strawberry Banana Muffins came out great.  If you like banana recipes, you may also like my 5 Minute Banana Ice Cream or my Grain Free Banana Bread.

These healthy muffins are vegan and gluten free.  They went fast at our house! You can whip them up in no time at all.  You can freeze some for those days you need a quick breakfast on the go.  They freeze great!

Banana Chocolate Chip Muffins

You have got to try these Banana Chocolate Chip Muffins!  My 5 year old asked for a cupcake maker for Christmas.

It was the one thing she begged for.  I got it for her.   I was thrilled she was taking an interest in baking!  The cupcake maker came with a book full of recipes, but none of them were whole foods based.  I had 3 ripe bananas I needed to use, so I created this recipe for banana chocolate chip muffins.

These healthy muffins are gluten free and vegan, with very little added sugars!  The super ripe bananas were very sweet on their own.  I made some of the muffins in the cupcake maker, and the rest in a jumbo muffin pan for my husband.  I will write the recipe for an oven though.

These must have been good because the girls ate every single mini muffin from the cupcake maker!  There were seriously none left!  I am glad I taste tested one right out of the oven!

Banana Nutella Popsicles

I have made you some Banana Nutella Popsicles.  Growing up with a German mom, we always had Nutella in the house.  I had been known to sneak that jar up to my room and enjoy a few bites form time to time.  Sadly, the store bought Nutella is laden with unwanted ingredients.  So I created these Banana Nutella Popsicles to hopefully curb that craving.  These came out delicious!

Unlike some of my other popsicle recipes, these are free of cococnut milk.  In stead, I added bananas for the creamy factor.  They go so well with the hazelnuts and chocolate.  This recipe makes a small batch of only 3 popsicles, so you may want to double it.

Banana Blueberry Muffins (Vegan and Gluten Free)

Banana Blueberry Muffins.  My husband and kids just love muffins.  Mostly because they are a great snack for on the go.

After my Lemony Blueberry Muffins were such a hit here, I started to think about other great blueberry combinations.

So that is how these banana blueberry muffins were born.  This banana blueberry muffin recipe is made with whole grains and no oil or butter.

There is also very little added sugar in each muffin.  They are mostly sweetened with fruit.

These muffins are so moist, you would never guess they contained no oil!  They are also gluten free and vegan. 🙂 Very kid friendly.  I made mine into jumbo muffins, but you can make standard sized muffins as well.

Chocolate Almond Banana Bites (Vegan)

Chocolate Almond Banana Bites.  These chocolate almond frozen banana bites are so good! I wanted to incorporate the flavors of my 5 minute banana ice cream, which I seem to make at least a few times a week.

These frozen chocolate treats are so healthy and it feels like you are cheating!  No ice cream maker necessary!

This recipe actually won a contest on The Today Show.

Chocolate Almond Banana Bites

These chocolate almond banana bites contain no added sugars, except for the small amount of sugar in the dark chocolate.   They are a great banana chocolate dessert to keep in your freezer when you have that sweet craving.

I used standard sized muffin cups to make mine, but you can also use mini cups and make a larger, bite-size batch.

Chocolate Almond Banana Bites

Chocolate Almond Banana Bites

Serves 6     adjust servings

Satisfy your sweet tooth with this healthy treat!

Ingredients

Instructions

  1. In a small bowl, mix the banana, vanilla and almond butter.
  2. Mash it together well and set aside.
  3. In a saucepan, , melt the chocolate and almond milk on medium heat, stirring constantly.
  4. Once you get a smooth chocolate, add a small amount to the bottom of a lined muffin tin.
  5. I used silicone muffin liners to make removing the chocolate easier when it’s time to eat.
  6. Once you have placed chocolate at the bottom on each cup, stick it in the freezer to firm up. About 10 minutes.
  7. Once the chocolate is firm, add in the banana filling and then cover the top with more chocolate.
  8. Repeat these steps until all are done.

Using standard sized muffin cups, I got 6 out of my batch. I store them in the freezer. Enjoy!
