Sweet Potato Scones (Vegan, Gluten Free)

Yesterday here in Dallas is was dreary and rainy.  That always makes me want to bake.  So I made you these Sweet Potato Scones.  Not only are they super delicious, they are vegan, gluten free and grain free!

Morning Glory Breakfast Cookies

Have you ever had Morning Glory Breakfast Cookies? Or maybe morning glory muffins?  They are very similar to carrot cake muffins or carrot cake breakfast cookies.

Today I am super excited to bring you this particular morning glory recipe since it’s totally grain-free!  I used chickpeas as a base and they turned out great.

These healthy breakfast cookies have very little added sugar.  There is only 1/4 cup maple syrup in the entire recipe!  They are vegan, gluten free and grain free!

You can easily make these nut free by using sunflower seeds instead of the pecans.

Oat Bran Muffins (Vegan, Gluten Free)

I have some Oat Bran Muffins for you to try!  I have been making bran muffins for years.  However, the recipe I use is not gluten free.  It calls for spelt flour.

So this week, I tweaked it a bit to make it gluten free.  The result was delicious and my 6 year old LOVED them.  I hope you love them too.

Not only is this recipe vegan and gluten free, but it can easily be made nut free if you just swap out the almond milk for another nut free milk.
