Spinach Chickpeas and Mushrooms

We have been staying at my inlaw’s house during our kitchen renovation.  My mother in law made this awesome Spinach, Chickpeas and Mushrooms dish.  It’s super simple to whip up and naturally I had to share it with all of you.  This Spinach, Chickpeas and Mushrooms recipe could be eaten as a side dish, or you can serve it over rice or quinoa for a complete meal.  Spinach, mushrooms and chickpeas are 3 of my favorite foods.  If you love chickpeas as well, you may also like my maple cinnamon roasted chickpeas or my epic chickpea spread.

Chocolate Chip Chickpea Pancakes (Vegan)

I am always trying to sneak foods into my kids diets.  That is exactly what I did with these Chocolate Chip Chickpea Pancakes.

I got the idea to make these pancakes because I have been making these chickpea omelettes lately.  I make a savory version for myself, but I noticed that the chickpea flour had a sweet taste to it.

So I knew these Chocolate Chip Chickpea Pancakes would be good.  These are a little thinner than traditional pancakes, but very good.  Almost like crepes.

You guys!  My kids gobbled these up!  I love that they are getting a boost of protein and fiber with these.  So they will stay full longer.  That is something you don’t get with traditional pancakes.

These chickpea pancakes were a cinch to make.  They are vegan, gluten free and grain free.  The perfect healthy breakfast recipe.

One of the best parts of this recipe is that the only wet ingredient you need is water, so you can make the mix up and store it in the fridge for whenever you get the urge to have some pancakes.

Chickpea Vegetable Soup (Vegan, Gluten Free)

It has been seriously cold here this week in Dallas.  So this Chickpea Vegetable Soup was in order.  This Chickpea Vegetable Soup is super easy to make.

You can make this healthy soup in your crock pot, or on the stove.  Either way works great.  This healthy vegetable soup came about when I discovered my peppers and tomatoes were starting to look a little wrinkled and soft.

I wanted to use them up so I made this soup.  I hope you enjoy it.  If you like soups as well you may enjoy this post.

I added the chickpeas to make this vegetable soup a complete meal.  I also had tons of chickpeas to use up so they were perfect.  This soup makes a large amount and freezes well.

You can freeze in serving sized containers for easy grab and go meals.  I topped mine with avocado because avocado makes everything better. 🙂

Flourless Blondies (Vegan and Gluten Free)

Flourless Blondies.  I was recently asked by a reader to create a flourless blondie recipe.  So that is how these flourless vegan blondies came about.

If you had my super moist flourless brownies, you know that beans can work very well in dessert recipes.  These flourless blondies are so yummy.

I was eating the batter right out of the food processor.  That is one good thing about making healthy vegan desserts.  You can eat the batter without any fear of getting sick. 🙂

These healthy blondies are so good!  I am telling you no one will ever know there is beans in these.  Kind of like my peanut butter cookies.

My kids were totally fooled!  These blondies are vegan, gluten free.  If you want to make them grain free, you could probably use quinoa flakes in place of the oats.

Quinoa is technically a seed, not a grain.

Chickpea Curry Lettuce Wraps

Chickpea Curry Lettuce Wraps.  I love curry dishes.  Do you?  Last night I got the idea to do a chickpea curry.  I already have a pumpkin coconut curry on my blog.

Since I love chickpeas, I really wanted to include chickpeas in a curry dish.   That is how these healthy lettuce wraps were born.

I decided to put my chickpea curry in lettuce wraps.  So I sent my husband to the store for romaine lettuce.  He came back with this red leaf lettuce you see pictured.

I think the red leaf lettuce worked fine, but I wanted to let you all know my original vision was a romaine lettuce wrap.

Honestly, I think this chickpea curry is great on it’s own, or in the lettuce wrap.  It’s a great way to get some turmeric in your diet too.  This dish is vegan and gluten free. I hope you enjoy it.
