Acorn Squash Veggie Burgers

I love homemade veggie burgers and these Acorn Squash Veggie Burgers are my latest creation.  Well actually, they were created by my husband, Marcus.  Sometimes you have an idea for an awesome recipe and it doesn’t turn out as expected.  However, sometimes you can turn that into another delicious recipe instead.  That is exactly what happened in the case of these acorn squash veggie burgers.  We roasted the squash a little too long and it could not be chopped into cubes.  So we decided to puree it and make these veggie burgers instead.  One can never have too many veggie burger recipes right?

These veggie burgers were great on their own with a side of veggies.   They should also work well if they are eaten with a bun.  I am just not a huge bread person, so I usually skip it.  One of my favorite sides to eat with this is my maple glazed Brussel sprouts or my simple roasted broccoli.  If you didn’t want to use acorn squash, this could also probably work with sweet potato, butternut squash or pumpkin.

Creamy Mushroom and Spinach Pasta

Mushrooms and spinach are two of my favorite vegetables.  They go so well in this creamy mushroom and spinach pasta.  This is a healthy meal that doesn’t take very long to make at all.  I used brown rice pasta in this creamy mushroom and spinach pasta to keep it gluten free.  You can probably use regular pasta as well if you have no issues with gluten.  If you also enjoy spinach and mushrooms together, you may also like this recipe.

I used full fat coconut milk in the can to give this pasta a creamy texture and taste.  Not only does the coconut add to the taste, but the richness of it will keep you satisfied after only a small amount.   This creamy mushroom and spinach pasta is more heavy on the vegetables than it is on the pasta.  If you are grain free, you may also be able to make this dish with zucchini noodles.

I finally got on the stuffed zucchini train and made these vegan zucchini boats.  You can never have too many zucchini recipes right?  Especially when they are healthy zucchini recipes.  These vegan zucchini boats are super easy to make and only contain simple ingredients that you already have in your house.  I love recipes like that, don’t you?

Some foods are really hard to photograph.  This is one of them.  Even though the picture isn’t great, I promise the recipes is delicious.  I am slightly obsessed with sun-dried tomatoes these days.  In my opinion, the sun-dried tomatoes are what really makes this recipe delicious.  Every other bite you get the sweetness of the tomatoes.  It pairs very well with the onions and garlic.  Since I made this recipe with quinoa, it can be a complete vegan meal.

I often will make a large batch of quinoa at one time.  Then I stick half in the fridge and half in the freezer.  That way, I always have some on hand to add to meals.  My husband has been trying to eat less and less grains, so we have been eating a lot more quinoa than rice these days.  I hope you enjoy quinoa, kale and sun dried tomatoes recipe.   One more thing.  Have you ever tried massaged kale?  OMG it is life changing! I always though kale was gross until I learned to massage it.  I made this short video with my daughter to show you how.

You can definitely use massaged kale in this recipe instead of baby kale.  Either way would be great.

Mushroom and Bell Pepper Fajitas

Fajitas are so hard to photograph.  I did the best I could.  I hope they look yummy to you.  These fajitas are vegan and gluten free.  I topped them with my dairy free sour cream.  It’s amazing.  If you haven’t tried it, you should.  It really taste like sour cream.  Or at least what I remember sour cream to taste like. lol.  And everything is better with avocado.  Agreed?

I am all about easy recipes and this quinoa with roasted vegetables is no exception.  Not only is this quinoa with roasted vegetables easy, but it calls for ingredients you may already have in your kitchen!  It’s going to be one of my go to recipes for sure.  Great in summer or winter.  Eat it hot or cold.  If you like quinoa recipes, you may also like this and this.

I was really amazed that this dish had so much flavor with such simple ingredients.  Another thing you can probably do with this is to cook the quinoa in vegetable broth instead of water.  It should add an even deeper level of flavor.  This dish is vegan and gluten free.  I hope you enjoy it.
