Sweet Potato Chickpea Stir Fry (Vegan)

I am super excited to share this Sweet Potato Chickpea Stir Fry recipe since it contains many of my favorite foods! I could seriously live on sweet potatoes and chickpeas.

This recipe is great for so many reasons.  It makes A LOT of food, so it’s great if you batch cook and freeze some meals.  It’s also very inexpensive to make.

This sweet potato chickpea stir fry is vegan and gluten free.  It’s also very versatile.  I think you can add other veggies in here as well.  I think red bell peppers or kale would be nice additions.

I like to make large batch recipes like this and then freeze in serving sized portions. Then I can just grab and thaw exactly what I need, instead of thawing out this gigantic container and only using a little.

Disclaimer: This post has been sponsored by USA Pulses and Pulse Canada, but opinions are all my own.

My husband Marcus loves Mexican food.  This past weekend, we had some black beans we needed to use up, so he decided they would be perfect in this Easy Black Bean Mexican Quinoa.  We always try to add beans to our meals.  They are a fabulous source of protein and fiber.

Healthy Kidney Bean Pasta

We went to Disney World a few weeks ago.  Before we left, Marcus made this delicious Healthy Kidney Bean Pasta to help use up some of the stuff in the pantry.  I am not really a pasta person myself, but I thought this was awesome!  We used gluten free brown rice pasta, but I am sure any pasta will work. If you love easy dinner ideas check out this post too.  Some of Marcus’s other creations have been the sweet potato chili and the peanut noodle stir fry.

Sweet Potato Chickpea Tots

I had these Sweet Potato Chickpea Tots while in Napa a few weeks ago.  They were so delicious and they are very kid friendly.  A great way to sneak some veggies and beans into your kids.  The original recipe came from Bellingham Middle School in MA, which is ironically next to the town I grew up in!  I made a few changes to the original recipe, and I think they came out great!  I topped them with my Homemade BBQ Sauce.  I hope you enjoy them as much as we did!

This recipe makes a lot of tots, but they do freeze very well.  To freeze, simply lay them on a lined baking sheet and place in the freezer.  Once frozen, you can pop them into a ziplock bag and freeze them for up to 6 months.  These healthy tots are also gluten free and vegan.

Quinoa with Roasted Garlic and Potatoes

Sometimes the best meals come out using leftovers in the fridge.  We had slim pickings in the fridge today, so I asked Marcus to make us something with them.  He is so much better at that than I am.  He came up with this Quinoa with Roasted Garlic and Potatoes.  Before he started the recipe, I made sure to tell him to measure everything so I could share it with you all.  It came out delicious.  The roasted garlic adds such great flavor.   If you like this recipe you may also like some of his other recipes.  The most popular ones are, sweet potato chili, peanut noodle stir fry and 3 bean soup.
