Peach Pie Overnight Oats

I have a new overnight oats recipe for you!  This time it’s peach pie overnight oats.   These peach pie overnight oats came out very good.  I pureed my peaches to put in this recipe, but you could also add chunks of peaches instead if you like.

One of the best things about overnight oats is that there is no cooking required!  I make 5 at a time for easy breakfasts all week.  You can eat them cold or hot.  I eat them cold and it actually reminds me of cold cereal.  If you wanted to make these more of a peaches and cream oats, you could add in some plain yogurt or cashew cream.  Yum!

Blueberry Muffin Bites

I just love these blueberry muffin bites. Who doesn’t like a blueberry muffin?  They remind me of the blueberry muffin larabar.  In fact, I used similar ingredients.  My daughter loves that flavor, so I thought I would make some for her. I’m sure by now, you know that I love homemade larabars. 🙂 These no bake bites came out so good! Not only are these delicious, but they are very easy to make!

Strawberry Popsicles (Vegan and Paleo)

Summertime is here and it’s time to bring on more popsicle recipes!  Starting with these Healthy Strawberry Popsicles.  Who doesn’t like popsicles?  My kids love them, but the store bought versions usually include artificial dyes and processed sugar.

You can easily make your own popsicles with just fruit as the ingredient.  I added the chia seeds to my strawberry popsicles because I like to add in a little healthy fat and also fiber.

These homemade popsicles are so simple. They have no added sugars. Vegan and gluten free.  They take less than a minute to throw together.  It takes the popsicles about 6 hours in the freezer until they are ready to eat. They they are there in the freezer for you to enjoy anytime!

I love these popsicle molds! They have a drip catch it’s less likely to make a mess.  I know all you moms can relate! 🙂  If you don’t have popsicle molds, you can probably make this a sorbet in an ice cream maker.

These would really work with any fruit.  I imagine raspberry, blackberry or even kiwi would also be delicious.  So go crazy with all the fruit and eat popsicles all summer long.

Cherry Chocolate Chip Ice Cream

The warm weather is here and I am cranking out new ice cream recipes.  This cherry chocolate chip ice cream recipe is my latest one.  I just love cherries.  So when my husband brought a bunch home the other day, I knew I wanted to make cherry ice cream.  Of course I had to make mine cherry chocolate chip ice cream, because chocolate always makes everything better!  Am I right?  I love having an ice cream maker.  It is so worth the money when you think about the price of organic, dairy free and gluten free store bought ice cream.  You can make your own ice cream recipes for so much cheaper with just a handful of ingredients.

This cherry chocolate chip ice cream is dairy free, vegan, gluten free and even paleo friendly. It only takes 4 simple ingredients to make it.  I love 4 ingredient recipes.  I really think you could omit the sweetener all together in this if you happen to have some really sweet cherries.  You will need to pit the cherries, which can be a messy job unless you have a cherry pit remover. Love mine!

Healthy Blueberry Pie.  Out of all the desserts out there, pie has always been my favorite.  In fact, my very first blog post was a pie recipe.

Watermelon Salad with Blackberries and Basil

I am so happy that watermelons are showing up at the store again!  Watermelons grow so well here in Texas, so they are always very reasonably priced.  Not to mention juicy delicious!  We live off watermelon all summer.  I have told you guys in that past about my basil plant growing out of control.  Well this watermelon salad recipe used more basil as well.   Basil goes so well in this watermelon salad. This watermelon salad with blackberries and basil is super easy to make.  Vegan and gluten free too.   You will love it.  I promise. 🙂
