This healthy vegan energy bites are very adaptable to add in whatever other flavors you may like.  These little bites of goodness are vegan, gluten free and grain free.

If you need a nut free version, you can always use sunflower seeds instead of peanuts.  These would also work with almonds.

Brussel Sprouts Salad with Cranberries and Almonds

The other day, we ate at Whole Foods.  I love the selections in their salad bar.  So many items are actually organic now.  Anyway, I had this delicious Brussel sprouts salad.

So I took a picture of the ingredients and tried to re-create a similar dish at home.  My Brussel sprout salad is slightly different.  It is also very tasty!

Now that the weather is warming up, this Brussel sprouts salad would be perfect to take to a spring party.   Or you could make it for Easter as well.

They are just the right little bite of heaven.  Honestly, I don’t think these vegan cheesecakes taste much different than the real deal.  Although it’s been a long time since I have had an actual cheesecake.

These would make the perfect dessert for those that suffer from a dairy allergy.  I am beginning to think there is nothing that cashews can’t do!

Strawberry Creme Truffles (Vegan and Paleo)

These Strawberry Creme Truffles need to go on your must make list!  Who is excited that Spring is finally here?  I just love all berries and I am happy that I am starting to see them in the grocery store now.  I picked up a carton of organic strawberries the other day and I came up with these delicious strawberry creme truffles.

They are amazing and the filling just melts in your mouth!  You may also like my Pistachio Truffles or my Copycat Reese’s Peanut Butter Eggs.  These dreamy, creamy truffles would also make a great Easter treat!

Maple Cinnamon Parsnip Chips. I love making homemade chips.  These yummy homemade chips are my latest creation.  The maple and cinnamon flavors go so well in this easy parsnip chip recipe.

If you don’t know what parsnips are, they are in the same family as carrots and have a mild, sweet flavor.  These maple parsnip chips are so good!
