Healthy Banana Coconut Cream Pie

OMG, you guys.  This Healthy Banana Coconut Cream Pie is EPIC.  It’s been a long time in the making.  I actually attempted a similar recipe last year and it didn’t quite turn out right.  I am pleased to say that this healthy pie recipe came out awesome!

This pie is vegan, gluten free, paleo and free of refined sugars.  There are a few steps, but I promise it’s pretty easy.  I am also including a video tutorial in the post for you.  If videos are more your thing, you can follow my You Tube channel as well.

If you wanted to make this nut free, you can always use a different crust recipe.  Oat flour may work nicely as well. If anyone makes the crust with oat flour, please leave me a comment and let me know how it turned out.

The banana mixture itself would also make an amazing topping over ice cream.  Yum!

Easy Miso Roasted Broccoli

The other day, my husband Marcus made some Easy Miso Roasted Broccoli.  He shared a picture of it in my Facebook group. Since it was so well received, he thought to make it over again for the blog.  The first time, he didn’t measure anything. However, the second time he did, so I can share with all of you!

When we first made it, we were using up some soy-based Miso paste we had in the fridge.  The second time, we used a chickpea miso paste.  Both came out very good.  I just wanted to share that there was a soy free option. 🙂

Easy Miso Roasted Broccoli

In case you were wondering, you can find miso paste in the refrigerated section.  Near the tofu and other Asian products.  Almost any health food store will have it.  I got mine at Whole Foods.

This broccoli is so delicious, you will want to just eat it off the tray!

It’s been a very mild fall here so far, but it’s finally starting to get cooler.  Perfect soup weatherCreamy Broccoli Potato Soup weather to be exact.  This soup is great because it uses potatoes to add a creamy texture so no heavy cream is necessary.

Another great thing about this soup is that it only takes about 30 minutes to make. Easy peasy and totally delicious.

This healthy soup recipe is vegan, gluten free and grain free.  It also freezes well and it’s budget friendly. I used nutritional yeast to add a cheesy flavor, but you can omit if you like.  Or, if you eat dairy, you could add a little cheese in place of it.
