3 Ingredient Coffee Popsicles

I was going to post a savory salad recipe today, but I haven’t been able to get the photos finished.  So I hope you don’t mind I share these 3 ingredient coffee popsicles instead.  I don’t know about you, but I used to love Starbucks Frappuccinos.  I am sure they are laden with nasty ingredients and definitely not dairy free or vegan.  Well these 3 ingredient coffee popsicles are the dairy free and vegan version of the Starbucks Frappuccino.  Can it get better than this?  If you like 3 ingredient recipes you may also like my 3 Ingredient Chocolate Bars.

I was going to make this a coffee ice cream recipe, but I have been having issues with my ice cream maker. We put the paddle in the dishwasher and it warped.  So now I am waiting for a new paddle in the mail.  I promise when that comes in, I will be making more ice cream recipes for you all.  Oh, and it you hate the taste of coconut, you seriously cannot taste coconut in these at all.  All you taste is that wonderful creamy coffee flavor.   So good!

This ice cream is very easy to make.  I used my ice cream maker for this and it took about 20 minutes.  Having an ice cream maker is awesome.  I made my money back very quickly.  Have you priced organic/dairyfree/glutenfree ice cream lately?  It’s crazy.  You can make your own frozen desserts for very little.

Maple Cinnamon Ice Cream with Gingerbread Cookie Dough

Prep Time 10 min Cook Time 20 min

A maple cinnamon ice cream filled yummy gingerbread cookie dough. It's like Christmas in a bowl!

Instructions

  1. Please make sure your ice cream bowl has been in the freezer for at least 18 hours.
  2. Mix all ingredients except the cookie dough, into a bowl.
  3. Add contents into the ice cream machine and turn on.
  4. Once the ice cream looks almost done, add in the cookie dough.
  5. When finished, the ice cream will be a soft-serve consistency.
  6. Place ice cream in the freezer for at least one hour if you like a harder ice cream.

Pumpkin Spiced Ice Cream

Oh yes.  Pumpkin Spiced Ice Cream.  You knew the pumpkin recipes would be coming!    Since it’s still kind of warm here in Texas, I thought I would start off with a cool pumpkin treat: pumpkin spiced ice cream. This pumpkin spiced ice cream is quite good, easy to make, and easy to store.

Much to my surprise, my kids loved this.  They couldn’t stop eating it!  Even my daughter Meadow, who claims to hate pumpkin, ate this up.  If you don’t have an ice cream machine, you can make this recipe into popsicles using these molds.  For those of you wondering if this tastes like coconut, I can tell you that it doesn’t!  Since there are so many spices in here, that drowns out most of the coconut flavor you would normally get.

Instructions

  1. Throw all ingredients in a blender and blend for 1-2 minutes.
  2. Pour contents into an ice cream machine and turn on.
  3. Should take about 15-20 minutes.
  4. Remove and serve.

The ice cream will have a soft serve consistency. If you like a harder ice cream, put it in the freezer for an hour to firm up. If you don’t have an ice cream machine , you can make popsicles using these molds . The recipe makes about 4 servings. Enjoy!

Watermelon Mint Popsicles

When I think of summer, one of the first things that comes to mind is watermelon.  How awesome is a fresh slice of watermelon, right?  It reminds me of being a kid again.  I have already done a watermelon punch , so why not do some popsicles too!  These watermelon mint popsicle are perfect for a refreshing treat on a hot summer day. And who doesn’t like a good watermelon popsicle recipe?

My kids are loving these popsicle molds by Tovolo.  One of the things I like best about the molds, is the drip catch.  Perfect for my kids, who tend to eat these slowly.  Do you have them too?  If not, you should get some.

Prep Time 5 min Serves 6 popsicles     adjust servings

Ingredients

  • 4 cups watermelon
  • 10 mint leaves

Instructions

  1. Blend both ingredients in a blender for about 90 seconds.
  2. Pour into popsicle molds . They should be ready to eat in about 4 hours. Enjoy!

Pecan Caramel Ice Cream

I love making ice cream. It’s one of those things that looks hard until you try it.  This pecan and caramel ice cream might be one of the best ice creams I have ever made. This stuff is good… I really can’t say enough about this pecan caramel ice cream recipe.

You are probably wondering how I made a vegan caramel.  Dates can make an incredible caramel if you just blend them with a little water.  I love that I can make a caramel with zero added sugar.  I also added very little sugar to the ice cream mixture itself.  This recipe is like my 3 ingredient Peanut Butter Ice Cream.  Just a few simple ingredients is all you need.

Ingredients

    For the caramel

    For the ice cream

    Instructions

      For the caramel

      1. In a blender or food processor , blend up the ingredients for the caramel.
      2. Set aside.

      For the ice cream

      1. In the ice cream machine , add the ingredients for the ice cream, except the pecans and turn on the machine.
      2. After about 5 minutes, drizzle the caramel mixture into the ice cream bowl.
      3. When the ice cream looks like it’s almost done, add in the nuts.
