Easy Lentil Loaf (Vegan and Gluten Free)

Easy Lentil Loaf.  Ever  since I made my Lentil Sloppy Joes, I have been wanting to make more recipes with lentils.  So I made this lentil loaf recipe.

I searched Pinterest and came up with this recipe.   I used that recipe as a base, but had to change out many of the ingredients to use what I had on hand.

It came out so good, that I made it a second time and made notes of all my changes.  The original recipe is very tasty, but it is a little too involved for me.

I omitted several ingredients and also some cooking steps.  I hope you enjoy my version of this Easy Lentil Loaf.  If you also enjoy lentils, you may like my Red Lentil Soup.

My husband loved this so much, that he wanted me to make it a 3rd time in a row! I ate my lentil loaf with a side of roasted veggies.  You can also serve it with a salad or just eat it as is.

Anyway is delicious.   It also freezes well.  I think you could also sneak some extra veggies in here for your kids.  Spinach or carrots might go well.  Maybe even cauliflower.

Lentil Sloppy Joes

Omg you guys!  Lentil Sloppy Joes!  Where have these been my whole life???  Seriously delish.  The first batch of lentil sloppy joes went so fast that I had to immediately make a second batch.  I got the idea when someone posted a picture of their dinner in the Facebook group I run.  The girl who posted said she made up the recipe in her head with no measurements.

So I searched Pinterest and found this recipe.  I made mine slightly different with a few less ingredients.  Trying to keep things simple.  I used lettuce wraps for my lentil sloppy joes, but you can also use burger buns if you prefer.  If you love lentils, you may also like my red lentil soup and my green lentil salad.

These healthy sloppy joes are vegan and gluten free.  Very easy and kid friendly too. You can eat them in a lettuce wrap like I have pictured, or you can serve them over a baked sweet potato.  I have also added avocado and vegan sour cream to this.  The sour cream is so good!

Lentil Carrot Veggie Burgers

I just love homemade veggie burgers.   These lentil carrot veggie burgers are my latest creation.  Actually, my husband came up with these lentil carrot veggie burgers.  It’s quite easy with simple ingredients.  Homemade veggie burgers are super easy and always taste better than the rubbery veggie burgers you can buy at the store.  I always make sure to top my veggie burgers with avocado.  It always makes them that much better.  Then again, avocados make everything better, don’t they?  You could eat these burgers by them themselves, on a bun, or even top a salad with one.  Personally, I like mine without the bun and with a side of veggies like my simple roasted broccoli or my maple glazed Brussel sprouts.  Yum!

This recipe makes a decent sized batch so you will have some left over to freeze.  That works out great on those busy days when you have no time to cook.  These lentil carrot veggie burgers are vegan and gluten free.   I hope you enjoy them.

Pacific Foods recently sent me some samples of their new shelf stable hummus and I knew I wanted to make a veggie burger recipe with one of the flavors.  I used the roasted garlic hummus in this veggie burger recipe.  It is so yummy!  You may have heard me talk about Pacific Foods in my post about vegetable broth.

I do make my own hummus as well, but these shelf stable hummus packs are great for when you are on the go.  It could be a snack after sports, or at the beach or on a picnic.  I love that this hummus contains simple ingredients you would use in your own kitchen.  No funny stuff.  It comes in 3 delicious flavors.  Classic, roasted garlic, and roasted red pepper.   The reason I wanted to make a veggie burger with the hummus, is because I wanted to show you that hummus can be so much more than a spread.  It added great flavor to these veggie burgers.
