Lemon Poppy Seed Muffins (Vegan, Gluten Free)

Lemon Poppy Seed Muffins are one of my favorites.  I have been wanting to make some poppy seed muffins for awhile now.  The first batch I made were slightly burned, but this second batch came out great.

They are light and fluffy.  My daughter almost ate the entire batch herself!  Even the burned ones.  These lemon  poppy seed muffins are vegan and gluten free.

If you are a lover of all things lemon, then you will love these healthy muffins!  I used oat flour in mine, but you can also use gluten free all purpose.

Banana Chocolate Chip Muffins

You have got to try these Banana Chocolate Chip Muffins!  My 5 year old asked for a cupcake maker for Christmas.

It was the one thing she begged for.  I got it for her.   I was thrilled she was taking an interest in baking!  The cupcake maker came with a book full of recipes, but none of them were whole foods based.  I had 3 ripe bananas I needed to use, so I created this recipe for banana chocolate chip muffins.

These healthy muffins are gluten free and vegan, with very little added sugars!  The super ripe bananas were very sweet on their own.  I made some of the muffins in the cupcake maker, and the rest in a jumbo muffin pan for my husband.  I will write the recipe for an oven though.

These must have been good because the girls ate every single mini muffin from the cupcake maker!  There were seriously none left!  I am glad I taste tested one right out of the oven!

Squash Cranberry Muffins

Squash Cranberry Muffins are perfect for Fall.  My kids loved them!  The other day I roasted a kabocha squash.   I was going to use it in my Quinoa and Brussel Sprouts dish, but I ended up roasting it too long and it turned to mush.  So I pureed it and decided to use it in these Squash Cranberry Muffins.  My picky kids loved them!  They are super easy to make.  Vegan and gluten free.  I used part sorghum flour for these since I was out of oat flour.  Feel free to use gluten free oat flour as well.  If you enjoy this recipe, you may also enjoy my gluten free butternut squash bread or my pumpkin chocolate chip muffins.

I am still trying to use up all the food in my fridge and that is why I added cranberries and also chocolate chips.  You can really add in anything you like.  I know it’s hard to find cranberries that are not sweetened with sugar.  Well I found some at Natural Grocers that were apple sweetened.  I believe Eden Foods also sweetens their cranberries with fruit.

Strawberry Oatmeal Muffins

I like to make muffins with a filling.  That is where these strawberry oatmeal muffins come in.  Instead of just adding strawberries to the batter, I thought it would be better to make a strawberry cream.  My daughter calls them muffins with surprises inside.  These strawberry oatmeal muffins are very easy to make.  I used a strawberry cashew cream, but you can also use strawberry yogurt if you like.  Not only are these muffins made healthier, they have a nice protein boost thanks to the filling.  These might be a hit with pickier kids.  My picky 4 1/2 year old loved them. Especially the filling.  I hope you enjoy them as well.

Healthy Flourless Chocolate Muffins

Oh wow!  These healthy flourless chocolate muffins are seriously good!  They are also super easy to make.  All you need is 4 ingredients!

These chocolate muffins are very rich, and would probably be great for cupcakes as well.  These healthy flourless chocolate muffins only take about 20 minutes from start to finish.  No mixer required.  We all need more chocolate muffins in our life right?

I used peanut butter in these chocolate muffins to add a rich texture.  You could also use sunflower butter if you have a peanut allergy.  If you want the rich texture, but not the strong flavor of the peanut butter, you can try using macadamia butter or cashew butter.

Macadamia butter works awesome in my fudgy flourless brownies, so I know it would be good in these as well.  I also often use cashew butter as a base for my flourless cookie recipes.  These healthy chocolate muffins are vegan, gluten free and grain free.  I hope you enjoy them.

Peach Streusel Muffins (Vegan, Gluten Free)

Peach Streusel Muffins. My daughter loves peaches so I thought I would make her some peach muffins.  Streusel muffins to be exact.  Because muffins are always better with a streusel topping right?

These peach streusel muffins are made healthier.  In fact, the muffins itself has very little added sugar.  I used diced and pureed peaches to sweeten these.  The peach puree also kept these muffins super moist without the need for oil.  If you like these muffins, you may also like these and these.

The only time I used oil in the recipe was in the streusel topping.  Even then it was only 1 tablespoon.  These peach muffins are vegan and gluten free.  I hope you enjoy them!  These muffins freeze well, so make a double batch if you wish. 🙂
