Curry Roasted Chickpeas

Have you tried roasted chickpeas?  They make such a delicious snack.  You can make them sweet or savory. Today I opted for savory to make these Curry Roasted Chickpeas.  These were so good.  I had to hide them from my husband, because he kept trying to eat them before I could shoot the photo!  My 6 year old liked them too. Blueberry Flax Granola.  I used to be a huge cereal fan.  When I went to a whole foods way of life, I ditched the cereal for homemade granola.

I have many homemade granola recipes on my blog, now I can add this blueberry flax vegan granola recipe to the list.  If you have never made granola, this is a great recipe to start with.

It only has 7 simple ingredients.  If you don’t care for blueberries, you can use any dried fruit you like in it’s place.

As an added bonus, your house will smell amazing as it cooks.  You can enjoy this granola several ways.

The beginning of the school year is approaching.  So I made these Nut Free Snack Bites for you.  They contain no nuts, so they are perfect for school lunchboxes.  Not to mention, delicious!  My kids loved them and they also liked helping to make them.  If you are looking for more nut free treats, you may also like my banana bread baked oatmeal and my nut free truffles. Raspberry Macaroons (Vegan and Gluten Free)

Raspberry Macaroons that are vegan and gluten free.  I am loving all the spring produce!  I picked up some raspberries to make these Raspberry Vegan Macaroons for you guys.

They are super easy to make.  Just a handful of ingredients and no cooking required!  I think this might work with other berries as well.

These take about 5 minutes to whip up.  Then you just need to let them chill in the fridge.  This recipe is also nut free for those that have kids with nut allergies.

I added chocolate chips to mine, but you can omit those if you like.  I just love the flavor combo of raspberry and chocolate.
