I love baking around the holidays. Peanut Butter Cup Cookies are one of my favorite holiday cookie recipes.  Before this Whole Food Life, I used to do a lot of traditional baking.  However since that time, I have tried to modify those traditional recipes to make them a bit healthier. I hope you enjoy my version.

No Bake Oat Cookies

The other day, I saw this video on Facebook.  It was the inspiration for these No Bake Oat Cookies. My recipe is not only healthier than the original, it is also vegan.  Yay!  And really, who doesn’t like a no bake cookie?  You can literally whip these delectable cookies up in just a matter of minutes.

Peanut Butter Bars (Vegan and Gluten Free)

Peanut Butter Bars.  If you have been following this blog for a while, you know how much I love nut butters.  I even wrote a whole cookbook about them!

If you love nut butter too, you will LOVE these peanut butter vegan bars.  They contain very little added sugar and only 5 ingredients.  You don’t even need a food processor or mixer to make them!

These bars are vegan and gluten free.  You can make them with sunflower butter or almond butter to keep them paleo friendly as well.

These Peanut Butter Bars are super rich too.  All you need is a little to satisfy your sweet tooth.  If you didn’t want to use chocolate chips, you can always use my 3 ingredient chocolate bar recipe for the chocolate part.

If you choose that route, I would suggest keeping the bars in the freezer, not the fridge.  If you also love peanut butter, you will also love my 3 ingredient peanut butter muffins and my 3 ingredient peanut butter cookies.

Peanut Butter Banana Popsicles

I am always looking for ways to use up ripe bananas.  My daughter, Meadow, and I made these Peanut Butter Banana Popsicles together.   She loves helping me, and this recipe was a very easy one for her to help with.  You can see her in the picture below. If you like homemade popsicles, you may also like my blueberries and cream popsicles or my strawberry popsicles.

These popsicles can easily be made nut free by using sunflower butter instead of peanut butter.  I added some chocolate chips to mine, but that is a totally optional ingredient.  You can just do the peanut butter and banana if you prefer. Peanut Butter Cup Muffins

Who doesn’t like peanut butter cups?  Well I made them into muffin form!  I slightly tweaked my recipe for double chocolate donuts for these Peanut Butter Cup Muffins.  These came out super good!  This would make a yummy breakfast for on the go.  There is also a good amount of protein in each muffin.  I made jumbo muffins for the photo, but you can also use standard muffins.

Super easy snack idea for you guys today.  5 Minute Granola Bars.  Only 6 ingredients and 5 minutes to throw them together.  You can even make them nut free for school friendly snacks!  Use this 5 Minute Granola Bars recipe as a base, and add in whatever flavors you like.
