You guys!  I don’t get this excited over cookies that often, but I am so excited about this recipe for 3 Ingredient Peanut Butter Cookies!  Seriously.  Best. Cookies. Ever. These 3 Ingredient Peanut Butter Cookies taste just like the classic peanut butter cookies, but without the flour or refined sugar!  Super easy too.

These healthy cookies are so good and very easy.  From start to finish it’s less than 20 minutes.  No mixer needed!  I think the sweet and salty combo is what make these out of this world delicious.

These peanut butter cookies are vegan, gluten free and grain free.  If you wanted a paleo version, you can use almond butter.  If you needed a nut free version, try using sunflower butter.  I think either will work out.

Slow Cooker Quinoa Brownies.  You guys!!!  You have to try these slow cooker vegan quinoa brownies!  Just when you thought quinoa brownies could not get any better.

This recipe is seriously easy and it can cook while you are not even home.  I added peanut butter to these slow cooker gluten free quinoa brownies, but you can really use any nut butter you like.  Who doesn’t like chocolate and peanut butter together, right?

If you need a nut free version, I think sunflower butter will go very well.  I wanted to take the peanut butter chocolate flavors to the next level, so I swirled some peanut butter on top of these as well.

4 Ingredient Healthy Buckeyes (Vegan)

4 Ingredient Healthy Buckeyes. Do you know what buckeyes are?  I made some healthy buckeyes for you!  Buckeyes are a dessert that originates in Ohio.

According to Wikipedia, the buckeye candy resembles the buckeye tree, which is the state tree in Ohio.  I am not from Ohio and I have only driven through it a couple times.

However, I have had buckeye candy and it’s delicious! So I had to create a healthier version.

Basically, it’s a peanut butter fudge which is covered almost entirely in chocolate.  You can’t really go wrong when you think about peanut butter and fudge right?  Well traditional buckeyes are made from powdered sugar and other processed ingredients.

Not mine!  All you need is 4 ingredients to make my version.  If you like recipes with minimal ingredients, you may also like this post with 20 healthy dessert recipes with 5 ingredients or less.

You guys!  This recipe is seriously easy to make!  The balls themselves have no added sugar.   The chocolate chips contain a little.  Not much when you think of how thin the layer of chocolate around the ball is.

These flourless peanut butter muffins are so good.  They are vegan, gluten free, egg free, grain free and dairy free.

You can even keep them paleo by using sunflower butter or almond butter.  I used peanut butter in this recipe because my husband loves it.

I do think these muffins would be fabulous with almond butter though.  One thing I have to point out is that these flourless muffins have a slightly different texture than traditional muffins made with flour.

I think they are totally delicious, though.

Peanut Butter Pie (Vegan and Gluten Free)

Peanut Butter Pie.  I am a huge fan of all nut butters.  My whole cookbook is dedicated to them.  Personally almond butter is my favorite, but my husband’s favorite is peanut butter.

He just loves the stuff.  So I created this super easy peanut butter pie for him as well as you peanut butter lovers out there!

This peanut butter vegan pie has 3 layers. A nut and coconut crust, creamy peanut butter mousse filling, and chocolate ganache on top.

It’s super rich and decadent.  It wouldn’t take much to satisfy your sweet tooth.  Just a small slice will do.

Since this recipe is rather rich and  decadent, I would reserve it for those days when you want to splurge a little.  Not an everyday treat. 🙂
