Slow Cooker Stuffed Peppers

I just love making slow cooker recipes.  This new slow cooker recipe I have for you today is Slow Cooker Stuffed Peppers.  I already have one stuffed pepper recipe on my blog, but I wanted to do this one in the slow cooker.  I used quinoa for the stuffing, but you could also use rice if you prefer.  Hard to make these stuffed peppers look good in a photo, but I promise you they are delicious!

I made the quinoa separately before adding it to the slow cooker.  This recipe is very easy and makes a lot, so you will have easy dinners all week long.  I used my dairy free cheese sauce in this recipe.  I also think my pizza cheese sauce would be good in this recipe.   I hope you enjoy this stuffed pepper recipe as much as we did!

Protein Packed Energy Bites

I have a new snack recipe for you!   Protein Packed Energy Bites.  These Protein Packed Energy Bites get a lot of their protein from quinoa.  Quinoa is one of the only complete plant based proteins.  In addition to the quinoa, I have also added some seeds.  These healthy energy bites are healthy and super easy to make.  They would make a great pre or post workout snack.

These energy bites are vegan and gluten free.  I used quinoa flakes which are similar to quick oats in texture.  If you didn’t want to use the quinoa flakes, you can probably use quick oats in their place.  Nuts may also be a good sub for those that are grain free.  If you like energy bites, you may also like my grain free energy bites or my 3 ingredient energy bites.

Slow Cooker Quinoa Brownies

Slow Cooker Quinoa Brownies.  You guys!!!  You have to try these slow cooker vegan quinoa brownies!  Just when you thought quinoa brownies could not get any better.

This recipe is seriously easy and it can cook while you are not even home.  I added peanut butter to these slow cooker gluten free quinoa brownies, but you can really use any nut butter you like.  Who doesn’t like chocolate and peanut butter together, right?

If you need a nut free version, I think sunflower butter will go very well.  I wanted to take the peanut butter chocolate flavors to the next level, so I swirled some peanut butter on top of these as well.

Quinoa Pizza Casserole

I have to give props to my husband for this Quinoa Pizza Casserole recipe.  If you are new to my blog, my husband makes a good deal of the savory recipes.  Some of his other very popular creations are the Peanut Noodle Stir Fry and the Sweet Potato Chili.  I am just so much better at the desserts. 🙂  Mostly because I have always loved to bake.   This Quinoa Pizza Casserole is so freaking amazing!!  If you have tried and liked my Cheesy Vegan Quinoa Bites, then you must try this recipe.  It’s super easy to make too!

Broccoli Cheese Quinoa Bites (Vegan)

Broccoli Cheese Quinoa Bites.  I have been making a lot of quinoa dishes lately.  These Broccoli Quinoa Bites are the latest creation.

The other day we made some cheesy quinoa bites and they came out so well, that I wanted to do a broccoli and cheese version.

So that is how these Broccoli Cheese Quinoa Bites were born.  I made my quinoa bites in a standard sized muffin pan, but you could also use a large or mini muffin pan.  Just depends on how big you want the bites to be.

These Broccoli Quinoa Bites can be made ahead of time and frozen.  I ate a couple with a side of roasted veggies, but I also think they might be good on top of some greens.
