Vegetable Soup with Millet

Soup season is here and I am loving every minute of it.  We always seem to have some soup stored away in our freezer.  It’s a huge time saver when life gets a little too busy.  This is my latest creation.

If you can’t find millet, wild rice or brown rice would make a nice replacement.  I added the millet because I wanted the soup to be a complete and filling meal.  This is very simple to make.

  • 4 celery stalks chopped
  • 4 carrots chopped
  • 1 onion diced
  • 8 cups vegetable stock
  • 1 cup red pepper chopped
  • 4 vine ripened tomatoes diced
  • 4 lg garlic cloves minced
  • 1 bay leaf
  • 1 tsp thyme (I used dried)
  • 1 tsp parsley (I used dried
  • 1 cup millet

  1. To make things super easy, I prepared all the veggies the night before.
  2. In the morning, toss everything but the millet in the pot.
  3. You can do this recipe on the stove or in the crock pot .
  4. Just cook on high for the first hour and turn down to low for an additional 3 hours.
  5. Throw the millet in about 20 minutes before you turn the soup off. This made a good 5 servings. Enjoy!

Carrot Ginger Soup (Vegan, Gluten Free)

Carrot Ginger Soup.  Now that fall is almost here, I am going to be punching out new soup recipes!  This is the first of many to come this winter.

Soups are great because they are super easy and very budget friendly.  One of my favorite recipes on the blog is my Hearty White Bean Soup.

I used my homemade vegetable broth in this recipe.  So easy to make.  Just save all your vegetable scraps in the freezer and when you have enough, make a ton of broth.

You will never need to buy broth again.  We also added curry to ours, but if you are not a fan, you can just omit the curry.  I thought is made a nice addition though.

  1. Throw everything in a crock pot and cook on high for 3-4 hours, or on low for 7-8 hours.  You can cook it in less time, but I believe the longer a soup cooks, the better it gets.
  2. Once the soup is cooked, you can use an immersion blender to puree it.
  3. You can also transfer the mixture to a blender and puree it that way.  Either way works.

Recipe Notes

We got about 4 servings out of our batch. Enjoy!

10 Healthy and Filling Soup Recipes

We have had a crazy weird winter so far here in Dallas.  It’s snowed a few times, been in the 70’s a few days and poured rain so much my pool came close to over flowing!  Winter always puts me in the mood for soup.  So I wanted to write a post with some of my favorite soups.  Many can be made in the crock pot.  Slow cooking soups just makes them so much better!  My favorite soup is the Carrot Ginger Coconut Soup.  Yum!
