Cake Batter Coconut Butter (Vegan)

Cake batter coconut butter you ask?  Yes there is such a thing.  There is actually a brand that sells this very flavor at health food stores.  While their version is delicious, it goes for $12 a jar!  That seems a little pricey to me.

So I thought I would make my own version of cake batter coconut butter.  You can use this delicious coconut butter in place of nut butters, spread it on toast, mix some in overnight oats, or just eat it with a spoon.

I had a couple a lot of spoonfuls while I was making it.  I think I may also have a few plans for this cake batter coconut butter in future dessert recipes.

This homemade coconut butter will harden once it is stored in the fridge.  All you need to do is stick the jar in a bowl of warm water and it softens right up.

If you can’t find macadamia nuts near you, I think cashews would work as well.  However, I think the buttery texture and flavor of the macadamia nuts adds to the cake batter flavor.

Peach Chia Jam (No Refined Sugar)

Peach Chia Jam.  I made you a chia jam!  Are you seeing the peaches show up at your grocery store?

We are well into summer here in Texas, so I thought I would make some peach chia jam.  It turned out so good.

The best thing about this peach chia jam, is that there is no canning, boiling or pectin involved!  The chia seeds do all the work.  This chia jam is made in the refrigerator.  Super easy!

Another great thing about this jam is that it contains no added sugars.  Peaches are so sweet on their own, so I didn’t feel the need to add anything extra.

However, if you like things a little sweeter, you can probably add a couple teaspoons of maple syrup or raw honey.

This jam needs to be stored in the fridge and it should last a couple weeks.  It’s great on toast, on top of yogurt, or even as a pancake topping!

Homemade Cookie Butter Recipe

Homemade Cookie Butter.  Have you tried cookie butter?  It’s traditionally made from Biscoff cookies.

I have never actually had the store bought version of cookie butter.  Mostly because I am afraid I would eat the entire jar in one sitting haha!

The store bought cookie butter also does not have a clean ingredient list.  So I sought out to make some homemade cookie butter.  This stuff is awesome!!

I had to find something to mimic the buttery texture of the Biscoff cookies, so I chose cashews.  I have used cashews as a base in many of my flourless cookie recipes and it’s worked out great.

So I knew they would be great here.  This homemade cookie butter is vegan, gluten free and paleo approved.  It contains no refined sugars.

I am thinking about using it in some upcoming dessert recipes.  Maybe truffles.  I also had some with my 5 minute banana ice cream today and it was amazing!

Healthy French Onion Dip (Vegan)

Healthy French Onion Dip. French onion dip seems to be a staple at outdoor parties.  Well I have made you a healthy French onion dip!  Not only is this French onion dip healthy, but it is also vegan and dairy free.

This healthy vegan French onion dip is a cinch to make too!  You only need a few simple ingredients!  If you like this recipe, you may also like my dairy free ranch dressing and my dairy free sour cream.

To keep my French onion dip dairy free, I used cashews as a base.  If you don’t have issues with dairy, you can use Greek yogurt as a base. I wanted to keep my homemade French onion dip vegan though. 🙂

You could serve this with raw veggies or chips like I used in the photo.  The chips I used are Beanitos and they are delicious!  They are a great alternative to regular potato chips.

Espresso Vanilla Almond Butter

OMG you guys!  This espresso vanilla almond butter is the bomb.  The idea for this came to me after I heard about this product.

While that almond butter looks and sounds tasty, it does contain agave, which I avoid.  So I wanted to try a homemade version of the espresso vanilla almond butter.

Mine came out delicious and it was also very easy to make!

This recipe takes almond butter to the next level.  I suppose if you didn’t want to make the almond butter, you could make these into no bake cookies as well.

Thai Peanut Sauce (Vegan)

Thai Peanut Sauce.  Who doesn’t love Thai food?  Being vegan, Thai restaurants are a godsend because there is almost always something vegan on their menu.
