Sweet and Sour Cauliflower Stir Fry

OMG this Sweet and Sour Cauliflower Stir Fry is so good!  I am a big fan of sweet and sour sauce.  Sadly, most store bought brands are loaded with sugar and other additives.  So I had to make my own and boy did it come out good!  Actually, I can’t take total credit for this one.  I came up with the idea for a sweet and sour cauliflower stir fry, but my husband Marcus created the dish.  Some other creations of his are my Peanut Noodle Stir Fry and my Sweet Potato Chili.  He is so much better at the savory recipes.  I served this over brown rice, but it would be equally as good over quinoa.

This Sweet and Sour Cauliflower stir fry is vegan and gluten free.  You could probably serve it over cauliflower rice for a grain free option.  I kept the veggies and the rice in separate containers in the fridge so I could add the amount of rice I wanted.  I ate 2 servings of the veggies and only a small portion of the rice.  I can see the sauce working in a lot of other recipes too!

Vegan Pad Thai

I just love Pad Thai.  Now that I am vegan, I wanted to make a Vegan Pad Thai.  This vegan pad Thai came out really yummy!  In addition to being vegan, this healthy pad Thai recipe is also gluten free and grain free!  I used zucchini noodles to make this healthy pad Thai recipe.  I just love my spiralizer.  That is what I used to make the zucchini noodles.  Totally worth getting in my opinion.   This super easy recipe can be made up in no time at all.  If you like to use your spiralizer, you may also like this and this.

I highly recommend keeping the sauce and the vegetables separate until you are ready to eat.  The zucchini noodles can release moisture that can make the sauce seem a bit watery.  I actually spiralized my zucchini the day before I went to use it in the recipe.  I just stored it in a strainer with a bowl underneath to catch the excess water.  It seemed to work well.   We actually ate this meal cold, but I am guessing you can heat it up as well.  This may not taste exactly like traditional pad Thai, but it is a great option for vegans. Very yummy!

Miso Stir Fry with Cauliflower Rice

I know many of you avoid soy products, but I think it’s quite okay to include some fermented soy products in your diet.  Asian cultures have been eating them for years.  The real concern comes when you are already ingesting a large amount of soy found in processed foods.  As long as you avoid processed foods, a little soy will not be a big deal.  Since most soy products in this country are GMO, it is very important to look for soy products that have been non GMO verified.  This miso stir fry with cauliflower rice was both delicious and filling.  I added tofu to mine, but you could really use any protein you like in this dish.

Easy Quinoa Stir Fry (Vegan and Gluten Free)

Easy Quinoa Stir Fry.  Sometimes when money is tight, I have to cook from the ingredients I already have in my kitchen.  I often make easy stir fry recipes.  Many of those creations are not blog worthy though.  However, I do get a winner once and awhile.

This quinoa stir fry recipe was one of them.  I always have quinoa in my pantry.  I love cooking with quinoa because it’s not only a plant based complete source of protein, but it’s also gluten free.
