Chocolate Peppermint Truffles (Vegan)

Chocolate Peppermint Truffles.  This time of year makes me think of chocolate.  So how about some chocolate peppermint truffles?  Truffles, cookies, brownies to name a few.  It seems like there are always sweet treats going around at parties.

I have been trying to come up with cleaner versions.  This chocolate peppermint truffle recipe is another one of those.  Only 4 ingredients and just a few minutes!

I got the idea for these peppermint truffles after making my Chocolate Pistachio Truffles.  These healthy truffles are so good and they just melt in your mouth.

The best part?  They can literally be made in minutes!  I used to think truffles were hard to make, but this recipe proved me wrong.  It couldn’t be easier.

Chocolate Peppermint Truffles

Chocolate Peppermint Truffles

Prep Time 10 min Serves 10 truffles     adjust servings

Ingredients

Instructions

  1. In a food processor , combine all the ingredients and blend until a dough starts to form.
  2. Roll into balls and place on a lined baking sheet.
  3. Store in the fridge to firm them up. About 20 minutes. I got 10 truffles out of my batch. Enjoy!

Chocolate Pistachio Truffles

A few weeks ago, my husband made some amazing pumpkin enchiladas.  They had a pistachio dust on top.  Well he ground up too many pistachios and I have been wondering what to do with them ever since.  So I decided to make chocolate pistachio truffles.

These chocolate pistachio truffles remind me of chocolate ganache.  They simply melt in your mouth.  I think it is due to the pecan butter I added.  If you haven’t tried pecan butter, you need to!  Amazing stuff.  There are dates in these chocolate pecan truffles, but I honestly can’t even taste or detect them at all.  This easy dessert can be made in a matter of minutes.  Vegan, gluten free and grain free. 🙂

Chocolate Pistachio Truffles

Chocolate Pistachio Truffles

Chocolate Pistachio Truffles

Serves 10 truffles     adjust servings

No fuss truffles that are melt in your mouth delicious!

Ingredients

Instructions

  1. In the food processor or blender , combine the pecan butter and dark chocolate.
  2. Once they are mixed well, add in the dates and salt and mix until well combined.
  3. A ball of dough will form.
  4. Spread your chopped pistachios onto a plate.
  5. Roll the dough into balls, then roll the balls through the chopped pistachios.
  6. Once that is done, place the balls on a lined baking sheet .
  7. Once all the balls are done, stick the baking sheet into the fridge to firm up.

Pumpkin Pecan Caramel Bars

Pumpkin Pecan Caramel Bars.  Time for another pumpkin treat.  These pumpkin pecan vegan caramel bars are moist, gooey and totally delish!

If brownies and pumpkin had a baby, this would be it.  In fact they kind of reminded me of my Grain Free Blondies. If you are in need of a great dessert bar recipe, these pumpkin bars are a must-try.

They also happen to be gluten free.  Perfect for those Thanksgiving parties.  You can make these up pretty quickly too.  They would also be fabulous with my Pecan Caramel Ice Cream.  Yum!

Pumpkin Pecan Caramel Bars

Pumpkin Pecan Caramel Bars

Prep Time 20 min Cook Time 40 min Serves 9 squares     adjust servings

Ingredients

    For the bars

    For the caramel

    Instructions

    1. Preheat oven to 350.
    2. In a food processor , combine the dates and water and pulse until you get a caramel consistency. You will need to scrape down the sides a few times. Once that is done, set it aside.
    3. In a food processor or blender, grind up the pecans and oats into a course consistency.
    4. Add that to a bowl with the remaining dry ingredients and mix well.
    5. In another bowl, combine all the wet ingredients and mix well.
    6. Add wet to dry and mix until combined.
    7. Get a sheet of parchment paper larger than an 8X8 glass baking dish so you will have some extra paper sticking out the sides. This will make these easy to remove after they are baked.
    8. Slowly spoon 1/2 the batter into the 8X8 pan. Then add a layer of the “caramel.” Lastly, add in the remaining batter.
    9. Bake in the oven for about 30-40 minutes. I got 9 squares out of my batch and I stored them in the fridge. You can also freeze them! Enjoy!

    Chocolate Almond Banana Bites (Vegan)

    Chocolate Almond Banana Bites.  These chocolate almond frozen banana bites are so good! I wanted to incorporate the flavors of my 5 minute banana ice cream, which I seem to make at least a few times a week.

    These frozen chocolate treats are so healthy and it feels like you are cheating!  No ice cream maker necessary!

    This recipe actually won a contest on The Today Show.

    Chocolate Almond Banana Bites

    These chocolate almond banana bites contain no added sugars, except for the small amount of sugar in the dark chocolate.   They are a great banana chocolate dessert to keep in your freezer when you have that sweet craving.

    I used standard sized muffin cups to make mine, but you can also use mini cups and make a larger, bite-size batch.

    Satisfy your sweet tooth with this healthy treat!

    Ingredients

    Instructions

    1. In a small bowl, mix the banana, vanilla and almond butter.
    2. Mash it together well and set aside.
    3. In a saucepan, , melt the chocolate and almond milk on medium heat, stirring constantly.
    4. Once you get a smooth chocolate, add a small amount to the bottom of a lined muffin tin.
    5. I used silicone muffin liners to make removing the chocolate easier when it’s time to eat.
    6. Once you have placed chocolate at the bottom on each cup, stick it in the freezer to firm up. About 10 minutes.
    7. Once the chocolate is firm, add in the banana filling and then cover the top with more chocolate.
    8. Repeat these steps until all are done.

    Special Birthday Cookies

    On the 24th, my daughter Meadow turned 4.  She goes to pre-school and they celebrate birthdays.  So I made some special birthday chocolate chip cookies to take to her class. Let me say that there is some processed sugar in these.  Not much, but I bent my normal rules because it was her birthday treat.  I do allow my children to have treats once and a while, and a birthday is an occasion where a healthy chocolate chip cookie recipe that bends the rules a little is in order.

    This healthy chocolate chip cookie recipe would be a great transition for those looking to eat healthier versions of sweets.  It’s sweeter than I normally would make, but if you are used to super sweet cookie recipes, this one is a great stepping stone.  Everyone loved them.  They are also gluten free and nut free!

    2. Mix all the dry ingredients in one bowl.
    3. Mix wet in another.
    4. Add wet to dry and mix until everything is combined.
    5. Drop cookies on lined baking sheets and bake for about 13-15 minutes.
    6. I got 19 cookies out of my batch. Enjoy!

    Pumpkin Spiced Ice Cream

    Oh yes.  Pumpkin Spiced Ice Cream.  You knew the pumpkin recipes would be coming!    Since it’s still kind of warm here in Texas, I thought I would start off with a cool pumpkin treat: pumpkin spiced ice cream. This pumpkin spiced ice cream is quite good, easy to make, and easy to store.

    Much to my surprise, my kids loved this.  They couldn’t stop eating it!  Even my daughter Meadow, who claims to hate pumpkin, ate this up.  If you don’t have an ice cream machine, you can make this recipe into popsicles using these molds.  For those of you wondering if this tastes like coconut, I can tell you that it doesn’t!  Since there are so many spices in here, that drowns out most of the coconut flavor you would normally get.

    Instructions

    1. Throw all ingredients in a blender and blend for 1-2 minutes.
    2. Pour contents into an ice cream machine and turn on.
    3. Should take about 15-20 minutes.
    4. Remove and serve.

    The ice cream will have a soft serve consistency. If you like a harder ice cream, put it in the freezer for an hour to firm up. If you don’t have an ice cream machine , you can make popsicles using these molds . The recipe makes about 4 servings. Enjoy!
